Oh my! This is our new favorite snack, salad, meal! I added some diced jicama and red, yellow and orange peppers for a snappy texture! Also, I found that I only needed 1/2 the oil.

Pork Chops with Raspberry Sauce

Reviewed: Apr. 16, 2006
Once I had a $25 plate of Lamb with a port wine reduction...this is EXACTLY THE SAME.. I TELL! This recipe should be the 1st one up! I have the pickiest group of boys. They all loved this. Rasberry jam is not the only one to use, try all sorts of jams. I used the only one I had, Black Currant and white grape juice instead of orange! So impressive!

Very easy, very tasty. The crust is quite rich with all that butter but contrasts well with the cranberries. Makes a nice size batch too! Thanks!

Grain and Nut Whole Wheat Pancakes

Reviewed: Jun. 25, 2005
okay, this is a very good base for ideas. The oatmeal and wheat flour is really great, I did increase to 1 1/2 cup each. I added pinch of Pumpkin Pie spice, 1/4 C.Brown sugar, 3T honey, 1 sm. banana,2T oil, 1 T vanilla, 1/4 C. orange juice and 3/4 C skim milk. My boys loved them. But after adding all of these changes, I felt that the original recipe deserved 3 stars.

Marinated Flank Steak

Reviewed: Jun. 24, 2005
Oh my! This was such a great recipe! I used it to marinate Flap Meat, very thin and flat pieces of meat. I doubled the recipe to marinate 2 lbs of meat, seperated into zip lock freezer bags and froze one. Thawed 3 weeks later, it was just as good as the one I cooked that night! GREAT! THANKS!

FABULOUS! So quick & easy! I doubled and used 3 bananas. No alcohol, used Vanilla instead of liqueur. Spooned over vanilla ice cream and drizzled chocolate syrup on top! The kids and my husband FREAKED OUT at how good this was! Thanks, I will be sure to make this one for family and friends. Even camping with angel food cake!

Banana Chip Muffins II

Reviewed: May 4, 2005
Quite good! I used 1/2 Non-Fat vanilla yogurt in place of applesauce. Changed the flour to 1 C flour with 1/2 whole wheat flour. Added some grated semi-sweet choc. & some pumpkin pie spice too! Baked in an 8 X 11 pan for about 18min. GREAT WAY TO USE UP THOSE RIPE BANANAS!!! AND NONE OF THE GUILT THAT GOES WITH THE FATTY VERSIONS.

Baked Dijon Salmon

Reviewed: Mar. 12, 2005
I was looking for cooking time and temps for salmon and found this perfect for what I was after. Great basic recipe that can be altered with any sauce. I used El Torito Cilantro dressing in place of mustard as my family does not like it. A lot of possiblities. thanks!

Baked Salmon II

Reviewed: Feb. 25, 2005
Wow, the others were right! I made this dish for family members that are on Atkins and for some that aren't. Everyone liked the flavor. I followed the recipe exactly and wouldn't change anything. I served mine on a big platter surrounded by brown rice. It was super easy and I will be using it again, maybe with chicken! Thanks, Norma!

Scottish Oat Scones

Reviewed: Feb. 6, 2005
So simple! I added a few things. 3/4 C wheat flour with 3/4 C unbleached flour. 1 1/2 C Oat Bran with 1/3C quick oats. Brown sugar in place of white, 1/2C orange juice with 1/3C milk. I found some craisens with orange essance, added those along with 3T melted butter, 1tsp almond extract and 1/4 C sliced almonds. Also, I dropped them on a silpat liner instead of a shaped cake so that they appear even more rustic. FABULOUS! This recipe is very versatile, can be endlessly changed to suit anyone's taste! Thanks for the recipe!

Stir-Fried Chicken With Pineapple and Peppers

Reviewed: Jan. 31, 2005
This was very easy. Followed directions to a "T" and added brocoli slaw. My family enjoyed it served over brown rice yet I felt it lacked a zip or something, not sure. Maybe some black bean paste/sauce would enhance this dish. I will make it again for the ease of it and the nutrition of getting those veggies in! Thanks!
