Tater Tot Taco Casserole

Hubby loved it. We are meatless so I subbed green pepper, red pepper and mushrooms for 1 lb. hamburger. As others recommended I added a can of green chillies. The last 5 mins where you add the additional cheese, I thought it seemed a little dry so I added some salsa and poked holes so it could get into the casserole. My grocer didn't have frozen Mexican corn so I used frozen roasted corn and it gave it a yummy sweet flavor. Will definitely do again.

Fettuccine with Sweet Pepper-Cayenne Sauce

DELICIOUS! I used whole wheat pasta and added grilled chicken and fresh spinach. I doubled the red pepper and added extra garlic My husband loved it. I served it with garlic bread sticks. You could add any veggies in with this and it would be good.

Mexican Rice II

The Best Unbaked Cherry Cheesecake Ever

Delicious! Very sweet. I doubled the recipe and used two bags of frozen blueberries as the topping. I heated them in a pan on the stove with a little sugar You probably don't need to add sugar because it is already very sweet.

Chicken Tagine

Different flavors but good. The apricots and cranberries add a lot. I used frozen chicken breasts and shredded them in the last 30 minutes. I used sweet potatoes instead of eggplant. Served over Couscous this is a different and good dinner.

It's Chili by George!!

Delicious recipe. I soak dry beans overnight for a little more texture in the chili. I add some brown sugar. For extra smoky spice I add two La Costena chipotle peppers in adobe sauce and a teaspoon or so of sauce and onion from the can. I skip the tomato juice and add one large can diced or whole tomatoes and some water. Add a little extra of all of the spices.

Slow Cooker Chicken and Dumplings

This recipe is so easy and SO GOOD. I add carrots, potatoes and celery. I put frozen chicken breasts in and shred in the last 30 minutes. I followed the advice of another and place the crock in the oven to cook the biscuits. Just follow the directions on the biscuits for cooking time and they turn out golden brown. Turns out delicious every time. My husband loves it.

Slow Cooker Mediterranean Stew

Delicious. I substituted peas for okra, sweet potatoes for eggplant. I had to add a can of tomatoes as it was a little dry. I did not put my zucchini and frozen peas in until the last 30-40 minutes. My husband loved it.
