Southern Grits Casserole

Great recipe! I make it for dinner and my picky eater 14 year old eats 2 or 3 servings. My only change to the recipe is I use 8 eggs. The hubby loves it with lots of hot sauce!

Green Bean Okazu

WOW!! It was so easy and good. My DH and I couldn't figure out where we knew the taste from and then it hit me.....YOSHINOYA!! If you have never had the pleasure of Yoshinoya Beef Bowl then you are missing it my friend. Anyway, I used about a 1 1/2 pound of beef (browned with garlic and black pepper), doubled the soy sauce and sugar (and still not enough liquid for us) and petite frozen green beans. DH says it needed thin sliced onions (didn't do it because my boy doesn't like them). It was so quick, easy and yummy...this will become part of my dinner rotation!!

Baked Slow Cooker Chicken

Too, too easy and tasty!! I added a few more seasonings than the recipe suggested...garlic, poulty seasoning, S&P and lemon herb (which next time I will add more!) I more celery stalks in the bottom and a little apple cider (that is what was open in the frig). Washed the bird, seasoned, put it in the slow cooker and walked away! It cooked for 6 hours on low/med. It did fall apart a bit, no big deal because I wasn't making a presentation. It was moist, tasty and too easy! I will be making this for all my recipes that call for cooked chicken.

Ratatouille Bake

SO YUMMY! I used fresh veggies from our local Farmer's Market. I used fresh tomatoes instead of sauce. I also used ravioli with meat inside of it. It went together quickly. I used a 9X13 baking dish. I just LOVE finding tasty, quick recipes on AllRecipes!

New Orleans Corn Bisque with Smoked Sausage

WOW! So delish and easy! Not sure why 'New Orleans' is in the name because there is really nothing 'New Orleans' about it. And I mean NOT in a bad way. Only slight tweeks.....cooked the sausage with the onions and garlic. And I used a full bag of frozen corn. It was an easy and filling soup on a cold winter's night. And is will be part of my winter dinner rotation.

Special Occasion Stuffed Crown Pork Roast

WOW! This crown roast was delish! It was not an easy recipe but well worth the effort. Only minor tweaks.....we used fresh apple cider (AND 2 times the amount called for.....stuffing because we used dried bread crumbs instead of fresh) and added 1/2 cup of finely chopped pecans. We followed the rest of the recipes and loved this roast. The only thing we will do is take the roast out a bit earlier....it was almost too dry. And the roast was amazing the next day too! We have a new Christmas dinner tradition.

Spinach and Feta Turkey Burgers

So, SO good! Followed a few other reviewer by adding 1/4 cup of dry bread crumbs, oregano and of course, more garlic! The other advice I took was to make the patties and freeze them. I put waxed paper between the patties. They cooked up beautifully! The burgers are delicious and so tasty! I will be making these again and again!

White Chili with Ground Turkey

LOVED IT! So easy and yummy!! I always read the reviews and make a few changes. I did not use all the chicken broth (but sorry can't tell you exactly how much I used...about 3 to 4 cups). I let the broth reduce and added a bit more as needed. It was thick just we like our chili. I only used 1 can of green chiles and for our tastes it was probably enough. Had just enough of a kick and not enough to be hot. I only used 2 cans of beans and I used Great Northern. This will be added to my regular rotation! Can't say enough how easy this was to make and to adpapt to your personal tastes.

Irish Soda Bread

I have lost my Soda Bread recipe given to me by my Irish second mother BUT I think this one is it! When I made it, it was just much like her recipe. I have never made Soda bread in a pan. And this recipe spread very much. I would say this is the closest to my long lost recipe!

Butter Beef

One of my FAVS!!! I have adapted this recipe into a 'cook once eat twice meals'! I use the recipe faithfully (OK...I add onions and a bit of fresh garlic BUT that is standard in my house in almost ALL recipes). Cook as directed....very good! BUT I did not find the 'gravy' thick or enough for my family. So I add at least one dry small package of brown gravy and some beef broth (I normally get a large carton of beef broth...use some when making the butter beef and then use the rest when I make stew). The first night, I serve it over mashed potatoes. THEN for the second meal out of this recipe I make beef stew. I use the rest of beef broth, butter beef, mixed vegs and potato soup to make beef stew. I love my CrockPot, AllRecipes and Butter Beef!!!

Buttermilk Pie

SO, SO delicious!! My changes/thoughts.....not the biggest nutmeg fan BUT love cinnamon, so as you can guess, I used cinnamon instead of nutmeg. No more changes just a suggestion that you use a deep dish pie plate. This makes too little for 2 pies and too much for 1 pie!! Having said all of that....great, easy pie! Very classic taste!

Slow Cooker Chicken Stroganoff

So easy! So yummy! This is one my picky eating son's favorites. Since I never have dry dressing mix, I made one modification. I use Wishbone Italian salad dressing. I think in the end, the taste is basically the same. The last time I made this, I only used half the cream cheese and it tasted great. And I thin the sauce with a bit of milk. I found the sauce too thick without the milk. I serve over thin spaghetti noodles and with steamed broccoli.

Banana Sour Cream Bread

Great recipe! Super moist bread! I use half brown sugar and white sugar. That is the only change I made. I did have to add almost 20 minutes of cooking time (maybe because of the size of my bread pans). Love this recipe...have and will continue to use this recipe for my banana bread!

Mama's Italian Wedding Soup

WOW! My hubby and kids will not stop talking about how much they LOVED this soup! I read other reviews and tweaked the recipe a bit. I added to the meatballs (fresh crushed garlic, onion powder, oregano, parm cheese, parsley) and cooked them in olive oil before adding to soup (my family would not like boiled meatballs). I also cooked the pasta (al dente). I also used less broth (it was all I had) so it was a bit less soupy and more stew like. I used a small scoop to make the meatballs (and I still think they were a bit too big) but easy none the less. All in all.....it was DELISH! And I will be making this again and again!!!

Pasta Lasagna

Great...Easy...Delicious! Family said it was great. Hubby thought is was 'regular' lasagna (he rolled his eyes when he saw the pan) and was pleasantly surprised to find this recipe instead. I used 1lb of beef and 16oz box of whole wheat pasta (family didn't have a clue!) and a bit more sauce. I used a 9X13 pan (and mine was VERY full). I would also say that if you like more garlic, spice, etc...go for it! That is what makes this a wonderful recipe, it is VERY easy to 'make it your own'.

Broccoli Fish Bake

Very good and so,SO easy! I used tilapia filets, 14oz bag of broccoli (we like it!), sprinkled with Old Bay and a little garlic...otherwise followed recipe exactly. Again, very easy and very tasty! Will add to the 'rotation'!!!!

Oatmeal Peanut Butter Cookies III

WOW! Made as recipe stated. Easy and delicious! Only issue is that the cookies are a bit soft...maybe better than being crispy! I guess I put too much (not enough according to the kids) filling because I barely had enough to fill all the cookies. Will make these cookies again and again!

Stuffed Shells I

The only reason I could not give this recipe 5 stars is that I found it a bit messy. I read many reviews and took the advice to fill the shells with a plastic bag. Maybe it is just me, but I made a mess! BUT, it was delicious! I did add a touch of crushed garlic and Italian herbs to the filling. I will be making this again BUT not something that is an everyday meal! Definately a weekend or company meal.

Best Beef and Broccoli

WINNER WINNER Beef and Broccoli Dinner! Oh so simple and quick to make! I did add garlic while browning the meat. I also cut the meat on the bias (and still frozen to make it easier) and it was tender. Can't wait to have for lunch tomorrow! This will be a regular in our house!
