Chicken and Gnocchi Soup

Delicious. Fantastic. Fabulous. This recipe is perfect- totally perfect! It was a huge hit to everyone I served it too, and it reheats beautifully! I got 6 generous servings. I did add the cornstarch slurry- and I used Fat Free Half/Half. I added a pinch of thyme and basil too. Thank you for such a yummy treat!!

Shredded Brussels Sprouts

Wowzer- who knew Brussels Sprouts could be so good! I have big plans for playing with this recipe. I did cut oil WAY back. Hubby thinks it would make great egg rolls. I'm also going to try adding a little heavy cream and serving it over pasta with grilled chicken. Delicious!

Roasted Garlic Cauliflower

Delicious Ham and Potato Soup

Totally wonderful! I used Bacon instead of Ham (just not a ham person!). I cooked it first and pulled aside to top the soup so it wouldn't get soggy. I added the celery, onion and a few chopped carrots to a little of the bacon grease and cooked them a few minutes before adding the potatoes. I used up a little chicken stock with my water, so I decreased the bouillon a little. Also added some Garlic Powder (would probably add fresh next time). Topped with the bacon, some green onion and cheddar cheese. The consistency and flavor were great!

Margarita Cake with Key Lime Cream Cheese Frosting

Great frosting! The cake consistency was a little "off" from the margarita mix...and a little too tart. I think just the lime zest and juice would be lovely. I also agree with others, it needs the tequila to taste like a margarita...otherwise it's just citrus cake.

Sesame Pasta Chicken Salad

Loved this!! Following advice of many reviewers, I cut the oil to 1/4 cup and think I could have used even less. I added grated carrots for a little color and mixed with half the dressing while pasta was hot and the other half the next day before serving. Love it cold- even better flavor the second day. Will make VERY often. Served at a party and had many guests ask for the recipe!

Fluffy Peanut Butter Frosting

So yummy! Who needs a cupcake when you have a spoon! I added just a tad more powdered sugar so it was thick enough to pipe and hold its shape. Fabulous on dark chocolate cupcakes. Thanks!

INCREDIBLE~Raspberry Cheesecake Cookies

OK- I made homemade chips like Shearone. Her review says food coloring- so I used it without even thinking! Please use coloring made for chocolate as my chocolate seized up I should have known before I even tried (my bad!). I froze it and chopped it into chips and used it anyway- these cookies are addictive and completely surprising! Loved them and will make again and again...just not with food coloring :)

Scrambled Egg Muffins

Fantastic concept! I used the idea from this recipe, but only used Bacon and Cheddar in mine. They were a huge hit at Easter, re-heated well and will be a staple at my house. I was really surprised at how great these were- Thank you!

Frozen Chocolate Chip Cookie Dough Balls

So yummy! These were a total hit. They are better on day two, and even more yummy if they thaw a little bit :) I used 1 cup brown sugar and 1/2 cup white sugar...I also added a little salt because I love it with my chocolate! Dipped in Almond Bark and decorated with festive sprinkles.

Kalamata Olive and Garlic Bread

Very tasty! I used a more traditional method for rising instead of heating anything, and I made the whole recipe by hand. I did use Black and Green Olives because I didn't have Kalamata...although I do love Kalamta!! I let it rise for a full hour on the second rise after shaping. The end result was soft and moist...packed with flavor! I'll try the addition of some olive brine in place of some water next time and maybe a little rosemary. I also only used 1 tsp of salt in the dough because I was using such salty olives! Wonderful recipe-thanks.

Boston Cream Pie Minis

Oh how I wish I hadn't made these! I cannot stop eating them!!! The frosting is so surprising...I had no idea how it would turn out, but it's thick and fudgy! I made these in my mini muffin pan- mouth sized bites of deliciousness!

Steak Soup

YUM!!! The broth for this is fantastic! I only had a tsp of Paprika left in my spice jar, so that is all I used. After reading the reviews, I only used 3 oz of tomato paste and that was perfect for my taste. I substituted peas for the corn and it gave it the perfect hint of color! Will be my go to recipe for sure!

Rice Balls a la Tim

Loved them!!! After reading all the reviews, I did add a little Italian Seasoning and Garlic Powder to the rice/beef mixture. I used Panko Bread crumbs, because that is what I had on hand. Served with a wonderful Tomato Basil sauce. Hubby and I both loved them! Re-heated in the oven the next day and the outside got even crispier. I think I would actually make them a day ahead next time because the flavor got even better!

Chocolate Chip Banana Muffins

Moist and delicious! I made mine with vanilla yogurt, used 1/4 cup of sour cream in place of 1/4 cup of the oil and added a little orange zest. Still moist a few days later. Will make again and again!
