About 4 years ago I got engaged to the love of my life and decided I was going to "get skinny" for my wedding. I've always cooked, but was not healthy about it. I joined Weight Watchers and lost 60 lbs. in 9 months and have kept it off for almost 4 years now. My wedding dress was a size 1. Since then I began running and doing aerobics and cooking healthy, vitamin-rich meals.
My favorite things to cook
I love to "convert" traditionally unhealthy dishes and incorporate more vegetables, leaner meats, less sodium and different cooking methods. I love roasting vegetables, grilling fish and making stir-fry.
My favorite family cooking traditions
Making "Campfire Gourmet" meals with my husband while we're out camping. We've been able to come up with creative and delicious meals using nothing but a campfire, aluminum foil, a saucepan and some skewers.
My cooking triumphs
Cooking an entire Thanksgiving dinner on my own the year I got married in my tiny kitchen. And, doing my best to substitute with healthier items where I could without sacrificing traditional Thanksgiving dishes.
My cooking tragedies
Anything I've cooked attempting to substitute real butter with soy butter, and almost everything I've tried to make with eggplant (just can't get it right).
