Tex-Mex Burger with Cajun Mayo

My modifications. I always have canned jalapenos on hand but since they are pickled they lose some of the heat... so I added a dash of Lousiana Hot Sauce and a few good shakes of crushed red pepper flakes. instead of pepperjack I sprinkled shredded colby jack into the mixture. (didn't have pepperjack on hand) I also added some Emeril's Essence (BAM!). My Cajun seasoning on hand was too salty so I opted for black pepper for the substitute. I blended the jalapeno, onion & garlic in the food processor. Patties formed easily and burgers were nice & juicy even though cooked well (no pink). Good amount of heat and flavor ratio.

O'Brien Kielbasa Skillet

"Plan B" my attempt didn't turn out. I think my hashbrowns were a bit freezer burnt so the result of excess water created "soft" hash browns. I attempted to salvage my train wreck by adding "Mural of Flavors" from Penzy's Spices and ended up transferring dish into 9x13 baking dish & adding 4 eggs beaten with a splash of milk and turned into a breakfast casserole. Flavors were good (thanks to Penzy's Spices!) but texture of hashbrown were still "soft" which is no fault of recipe. I would not recommend Polish Sausage it is just to mellow of a sausage compared to real Kielbasa. I gave it 3 stars cause it just lacks something.... Not based on my own result(s).

Tortillas II

I was disappointed that I wasn't able to use my new tortilla press (from Amazon) with this recipe, but rolling it out paper thin was easy with a rolling pin. I did substitute the shortening with Blue Bonnet Light Margerine Spread and it worked very well.
