Oven Fried Chicken III

I, like other reviewers didn't care for the sound of gloopy mayo, so I marinated the chicken in one of my favorite marinades (I have several), dipped in the spiced bread crumbs. The marinade is enough to make the crumbs stick. Otherwise, no changes. Thumbs up!

Curried Winter Soup - modified

I, too, made changes (barley instead of pasta, brown rice, added fresh green beans, used Garam Masala & cayenne instead of generic "curry powder", and tomatoes with jalapenos instead of regular tomatoes --- can you guess my family likes spicy food?) Everyone loved it! Had it for New Year's Eve, then again with the rest of the black eyed peas mixed in on the 2nd. Everyone liked it again. A very versatile recipe and well nigh foolproof. Thanks, Sandy!

Oven-Roasted Asparagus

I should have heeded the other reviewers who said that 12 minutes was too long for thin asparagus. Mine turned out dry and chewy rather than tender. I may try again with a shorter roasting time.

Pan-Seared Tilapia

Very easy and delicious. I added some other herbs to the salt and pepper, and I didn't add the butter on top, but otherwise followed the directions. I can see changing up the spicing for a different "mood" to fit whatever else I'm preparing to go with it. I foresee more fish on our menu after discovering this recipe!

Sean's Mommy's Roasted Root Vegetables

I used what I had (carrots, parsnips, rutabaga, turnip, yam, onion, beets) and sprinkled with garlic granules as well as pepper (no salt due to health issues). I misread the temp and baked at 350 for 45 min, found that they were still not done (surprise!) although they were starting to brown. I covered with foil and baked another 15 min. Turned out quite good. Hubby started out dubious, then decided that, hey, he actually liked them, but only for once-in-a-while. Next time I'll try for the right temp. This is not for rating this recipe, since it doesn't use beets, but a caution to beet users. They do add color, but the color tends to bleed onto all the other veggies. Tastes fine, but for more formal presentations I would leave out the beet.

Slow Cooker Texas Pulled Pork

This was a little too sweet for my taste, although otherwise was quite tasty. I wound up adding more vinegar and mustard to cut the sweet, but next time I think I'll just leave out the sugar.

Jo's Rosemary Bread

Excellent! I used a little less salt (1 tsp) and used fresh rosemary. I substituted a little garlic, oregano, basil and thyme for the Italian seasoning and added 1/4 cup of grated Parmesan cheese. Fabulous. My spouse said it was the best bread I have ever made.

Cauliflower Supreme

I didn't have mushrooms, so left them out. I used half the bouillon and much less butter. It turned out just great. I'll try it with the mushrooms next time.

Strawberry Upside Down Cake

I read the comments about it being too runny and drained the strawberries, using the juice in the cake mix instead of water. This led to me not having enough strawberry mixture to cover the top of the cake mix. The cake part had started to crust before the marshmallows could rise to the top. It tasted OK, but to my taste too sweet. The appearance left much to be desired. (It was kinda splotchy.) It would probably have been better if I'd used more strawberries and made homemade cake batter with less sugar.

Thai Green Curry Chicken

Very nice green curry. I added some chopped onion, sliced zucchini, sliced red bell pepper and coarsely sliced fresh basil (at the very end) to make it more like the restaurant style green curries. I'm planning on trying this again with different meats.
