Nutty Pina Colada Biscotti

I made these as party favors for guests at my mom's 60th birthday. Personally, I thought it was good, not great, but seriously, I got asked for the recipe no fewer than 12 times that evening! Everyone was opening up their packages and eating them even before dessert was served! They are definitely unique vs. traditional biscotti.

Mahogany Chicken Wings

These were fantastic. DH grilled these for a party we were having. Between the time that he put the first batch on the kitchen counter and took the 2nd batch off the grill, the 1st batch was all gone.

California Grilled Veggie Sandwich

This was awesome!! I made as written. For the main protein of the sandwich, I grilled a portabello mushroom for myself and a chicken breast for my husband. I used a ciabatta roll that I put in the oven to broil as it was getting too dark to do on the grill. Check out the recipe for Tuscan Soup on this website...it goes very well w/these sandwiches.

Chuck's Favorite Mac and Cheese

I needed to use up some cottage cheese and this recipe looked like it fit the bill. I did add about 1/2 cup of milk to moisten up the recipe. My toddler (a picky eater) had 2 servings and my hubby said it was his favorite kind of recipe for macaroni and cheese. A keeper and so easy I did it off the top of my head the 2nd time around. Thanks!

Classic Spanish Sangria

Wow! I served this at my birthday dinner party 2 years ago and my friends are still talking about it. I'm dusting it off again to try for the adults at my son's birthday party...I will be omitting the rum this time as it really sneaks up on you in the recipe. This is a 5 star because it is unforgettable and delicious!

Chocolate Toffee Crunchies

These were fantastic! I made them for some holiday treats for my husband's office. I admit, I made backup cookies in case these didn't work out, but they were perfect! I live in humid Florida, so I was concerned about the toffee setting up...it did great. My only advice is to follow the TIME instructions to a T. I did, and it was so good! Thank you!!!!

Avocado-Mango Salsa

Had a hankerin' for shrimp tacos and thought this would go well. Substituted fresh pineapple for mango. Cut back on the sugar. Yummy, yummy. Hubby said this w/the shrimp tasted like something at a restaurant.

Grilled Salmon I

This is totally amazing! I HATED salmon...this recipe was my one last shot at trying something to like salmon. It worked...we now have salmon Sundays in our house. I pierce the filet with a fork all over and put the salmon in the marinade, usually for a few hours. Hubby grills it while I make a side dish of jasmine rice w/peas and carrots and a green salad w/ginger dressing. My 2 changes: omit lemon pepper and garlic powder. Instead add fresh lemon juice to taste and fresh garlic. FYI, the leftovers are delish the next morning on a bagel w/cream cheese. YUM!!!

Oven Kalua Pork

I made this in the oven for a party I had with 30 guests. It cooked completely unattended, which was nice for me to entertain. The fat on the meat stays in place, so it's easy to remove vs. cooking in a crock pot where all the fat gets mixed in with the meat. I later added barbecue sauce to the leftovers to finish it up once we were tired of plain pork.

Playgroup Granola Bars

These came out 5+stars the first time I made them and more like 3 stars the 2nd time...I obviously did something wrong the second time, but these are worth a try. These lend themselves to some very easy substitutions too, depending on what's in your pantry.

Peanut Butter Noodles

I served this at a Hawaiian-themed party for my Mom's 60th birthday. It was good...the noodles definitely absorb a LOT of the sauce. They are very dry. Next time I will up the sauce, add way more chopped green onion and a few chopped veggies, like red bell pepper, peas and/or carrots. Good base to start with.

Cowboy Mashed Potatoes

This sounded so weird I had to try it. Reminded me of that horror of a fast food KFC was (is?) selling. This however was DELISH. I gave it 4 stars because I felt it needed a little something extra (approximately 1/3 C of sour cream). Got raves from my DH, MIL, and 2 year old son. Served w/rotisserie chicken and Rory's excellent cornbread (from this site). Great winter time meal.

Rory's Most Wonderful Corn Bread

I was trying to use up ingredients in the fridge and found this. Sounded so weird, but reviews were good, so I gave it a shot. I don't like cornbread, but this was fantastic! I upped the broccoli and cottage cheese to 1 cup each and cut the butter to 1/4 c. It turned out good. 2 year old son liked it, 'green stuff' and all. Served w/a rotisserie chicken and cowboy mashed potatoes from this site. Great winter time meal!

Delicious Black Bean Burritos

This was easy and nutritious. Flavor wasn't great, hence the 4 stars. I had to add some of that spreadable cheese in a garlic and herb flavor, which really helped. I actually used the leftover filling to go with rice as a side dish for fajitas...the beans were long gone!

Lentils and Rice with Fried Onions (Mujadarrah)

I've been trying to eat better and this sounded easy, inexpensive, and delicious from the reviews I read. I made it as the recipe stated with the additions of 2 extra onions and cumin as suggested by reviewers. I ate it right after it was done and it was ok...very earthy tasting and bland. I even jazzed up the sour cream topping w/a squeeze of lemon juice and some garlic. I had to toss the leftovers.
