Kale with Kiwi

Yummy! I love the flavor combo of these powerhouse foods together. The only thing I did different was to use KerryGold grass fed butter instead of coconut oil because I was out. The tanginess of the kiwi really complimented the ginger and garlic. This one is a winner.

Light Fruit and Nut Granola

This is the best granola recipe I've ever tried. I subbed some chia seeds for part of the flax, used only 1/2 the amount of brown sugar and used dried cranberries and raisins instead of the apricots. I also added a little bit of salt and some vanilla extract. I love that it actually clumps up and gets nice and crunchy just like regular granola. Yummy!

Spinach Salad With Berries and Curry Dressing

This the best dressing I have ever tasted! The curry powder really gave it great depth. It is now my go to dressing for salads. Yum!

Balela Salad

Yum! This dish was fantastic. The flavors tasted so fresh and blended with each other perfectly. I used all fresh veggies and herbs from my garden and it was so easy and fast to throw together.

Italian Kale

I have never cooked kale before, so I wasn't sure what to expect, but I was very pleasantly surprised. I subbed butter for the oil, but otherwise I followed the recipe. I had leftovers so I threw them in with some chicken soup, and it really kicked it up a notch, in fact, I might just have to make some for my next pot of soup!

This was a nice soft loaf of bread that tasted great just with a bit of butter. I did sub milk for the water and added 3tbs of sugar. The egg also gives it a lovely golden color.

Caramel Candies

Yummmeeeeeee! These were so delish, great buttery caramel flavor. I did sub an extra cup of brown sugar for the white sugar, I like a really rich flavor. My candy thermometer was on the blitz so I did the water drop test and took them to the hard ball stage. They were still soft and chewy yet not stuck to your teeth.

Christmas Cake

This Christmas cake rocks! I made it last year and it was gobbled up by the family in record time. This year I am gonna do some different fruit- dried cherries, cranberries, dates, currants, kiwi, and candied ginger. I'm sure it will be delish. Thanks for the great recipe!

WOW! The best yellow cake ever. It was so light and fluffy, just perfect! Just a note people, use the CAKE FLOUR, it makes a difference. And sift, and beat the heck out of your butter and sugar. Outstanding!
