Sweet Potato Casserole II

I'm not sure if it would have been different if I used fresh sweet potatoes instead of canned but using canned it was 4 stars. Alot of people complained that it was too sweet but in my opinion it wasn't sweet enough. lol. There also wasn't enough to fit in that sized pan so I mixed up a little more. I added the marshmallows throughout because I'm pregnant and have been craving them and I think that saved this for me. haha. Everyone else said it was great but there was still some on some left on their plates. I'll probably make this again with more sugar and cinnamon.

Easy Cheese Ball II

I'm not a big cheese person so my opinion didn't really count but my husband LOVED it when I made it last year so I made it again this year. We had guests this year and they loved it, too. I love how easy it is to make and it's gone fairly quickly. I'll be making this every year as hubby requested. :)

Homemade Black Bean Veggie Burgers

This is a great recipe. My husband is a major meat-eater and he still loves them. He actually requests these. We make it a little different. Instead of using hot sauce, we use Worchestershire sauce and it comes out fabulous. It was a little strong for me this time...but I'm pretty sure that's because my husband was "helping" me and added more sauce after I had already put extra in twice. lol. Anyway, these are amazing and good for you...definitely 5 stars!

French Toast II

This was very quick and easy. I admit that the bread did get soggy if you let it saturate but if you toast it in the toaster first then just dip it like twice into the mixture it comes out perfect. I know toasting it first sounds weird but it works...just put it on the lowest toaster setting so you don't actually cook it. lol. Other than that, we all loved the flavor, including my picky husband and 15 month old.

Salsafied Chicken and Rice

This was so good. It seems more like a side item than a main dish though. I was searching for main dishes when I found this. Oh well. It was ALL gone in the first round. :)

Ginger-Lime Chicken with Coconut Rice

The chicken was AMAZING!!! So yummy! The rice brought the rating down though. It was too...nutty? I don't know but it was a little bland. My husband loved the rice though. He said it tasted like his grandmother's rice pudding.

Cream Filled Cupcakes

These were so good. I put food coloring in the cream to make it pink for my daughter's 1st birthday party and everyone LOVED them. They were gone in no time! Yum! I didn't even put icing on them.

Cajun Chicken Pasta

I made this according to the recipe and I couldn't even finish it. It was just terrible. The flavors didn't mesh well at all. My husband only ate it because he didn't want to hurt my feelings.

Florentine Stuffed Chicken

I picked this recipe because of the ingredients and the time to prepare. It took longer than it said to cook it. I cooked it 10 minutes longer to begin with and at a higher temperature to speed it up and it was still half raw so my husband didn't have time to eat dinner. I cooked it another 15 minutes at regular temp. after he left and it was great. Also, the prep time sort of fudges because it didn't count the time to chop the onion and thaw the spinach so that kind of made me mad. However, it was very yummy. The flavors were great and I even pureed it for my 11 month old and she loved it. I will make again knowing the cook time. :) Great recipe, just needs a more accurate cooking time.

Campbell's® Healthy Request® Skillet Herb Roasted Chicken

I didn't really like this. It was pretty bland and the chicken burnt even though I followed the directions. So it was pretty gross. Next time I'll cut the chicken into smaller pieces and maybe some more spices to the sauce but as is, I give it 2 stars

Shrimp Durango

I thought this was great but my husband said it didn't have much flavor. He said it needed something like a side to kick it up. I thought it had great flavors...maybe he just got sidetracked by the durango part and thought it would be spicier. good recipe though!

Tantalizingly Tangy Meatloaf

This was delicious as is!! It was probably the best meatloaf I've had. Use the pineapple preserves. The reason it was so sweet for most people was the apricot. Much sweeter. Ours wasn't too sweet, though. It was perfect. I got the preserves from windixie. most grocery stores actually carry it if you look hard enough.

Best Ever Chocolate Chip Cookies I

These were VERY tasty. I added a little more vanilla but I'm sure they would have been amazing either way. My husband loved them. We made them much bigger and cut the recipe in half because I didn't have a big enough bowl. haha. The dough freezes well, too.

Pecan Sour Cream Pound Cake

Great recipe. I got bored last night so I looked up what ingredients I had to bake a cake and came across this! I don't have a tube pan so I just used a regular old 9x13. I followed the directions except I used regular sugar because I didn't have confectioner's sugar. It turned out a little...hard? lol. I doubled the glaze batch to cover it and cut the baking time by about 30 minutes. It was so good though. I think I'll make this again. :D My husband liked it. hehe

German Chocolate Birthday Cake

This is sooo good. And the directions are easy to follow. This was the very first cake I made from scratch. I made it for my husband's birthday while we were dating. Obviously, this cake does wonders. haha. :D And my whole family LOVED it. The only part I was confused about was trimming it but I'm probably just ditzy so I left it poofy on top. It's still yummy so I guess it doesn't matter.

Grandma's Cranberry-Orange Gelatin Salad

This was better than I thought it was going to be. Mmmmm! I will definitely be making this every year. :D....ok I reviewed this last year when I didn't have any guests over and just wanted to update. I made it again this year and I'm the ONLY one who ate any of it. Maybe I'll cut the recipe in half next time and eat it all myself. Not for people with texture issues or (duh) don't like cranberries. I still think it's yummy though.

Chicken Enchiladas I

The enchiladas were very tasty but the recipe was more time consuming than it said. Maybe it was just me, though. We didn't really like all the onion in it either even though I cut it down to half of what was called for. I will probably try to make this again without so much onion, and maybe let it simmer longer.

This was sooo good. I added some spinach to my plate and it was delicious. It was super easy and yummy. I loved that I could make it with ingredients I had on hand. I will definitely make this again.
