Cranberry Nut Bark

So quick and EASY to make. Made 2 batches for our Christmas Eve buffet. Hubby, whose tummy doesn't tolerate chocolate, loved this as did everyone else at our house Christmas Eve. I liked it too but I love chocolate better. Can use other dried fruit, as I found out by accident when I mistakenly used some blueberry flavored cranberries in the first batch. Couldn't find the candy coating so used white morsels. Will definitely make this again.

Peanut Butter Bars IV

I made the plain version of these bars for part of my dad's birthday gift. He's a big peanut butter fan. Everyone said they were good, but I think I would like them better with the chocolate chips as I'm a chocolate fan. I'll probably make them again when I want peanut butter cookies and don't have time to bake the individual cookies.

Irresistible Irish Soda Bread

Made this exactly as written and it was great. Very easy to mix up and bake in the loaf pan. Wonderful texture and moist. The butter and buttermilk made it very rich and it was not too sweet. I keep going back for another slice!

Lemon Lu Lu Cake

I made this cake for my mom's birthday today as she likes lemony desserts. Following some of the suggestions, I used 1/3 cup applesauce for the oil and only 2 cups confectioner's sugar and 1 cup freshly squeezed lemon juice for the icing. The cake was moist with a very pronounced lemon flavor (just what I was wanting). It was easy to make and my mom loved it. The next time I want a lemon dessert, I'll turn to this recipe.

Seminary Muffins

Tried these yesterday as I was looking for a quick recipe to use up bananas and applesauce. Only made a couple of changes: used 1/2 C. white flour and 1/2 C. whole wheat flour, left out the chocolate chips ( I LOVE chocolate but hubby's tummy doesn't handle it well), and increased the nuts to 1 C. Everyone said they were very good - very moist (not gummy) and tasty. I needed the full 20 minutes baking time. I will be making these again.

Strawnana Bread

Made this last night and had some for breakfast this morning. It was very tasty and moist. I had only one banana so I halved the recipe to use 1/2 C mashed banana. The only other change was to reduce the sugar to 3/4 C for the one loaf. The banana flavor dominated the strawberry flavor, so I will only use this as a variation on banana bread, but we still liked the bread very much and I will make it again.

Banana Banana Bread

I made this recipe "as is" and everyone loved it. Very intense banana taste. Next time I may play with the recipe and add nuts or coconut, as we like them, and perhaps a few spices. But even without any additions, this is a keeper.
