Stuffed Green Peppers I

Reviewed: Aug. 16, 2013
Great! Made a couple changes as suggested. Sliced peppers in half, added oregano, thyme, basil, garlic, black pepper & whole onion to beef while cooking. Used 3/4 c instant brown rice, 3/4 cup water. Prefer peppers cooked 5 min so they are softer/soggy. Kids seem to prefer them that way as well. Will make again.

Quick and Easy Tuna Casserole

Reviewed: Jul. 18, 2013
Made some alterations to suite our family. Sauteed onion in olive oil. Used 2 cans tuna, 1 can cream of mush, 1 can cream of chick, black pepper, garlic powder, 3 slices of cheese & 1/4-1/2 cup shred cheddar & mozzarella as recommended by others. Thinned sauce with milk as we like it more saucy! Topped with Italian bread crumbs & tossed in oven at 325 for 30min.

Shepherd's Pie VI

Reviewed: Nov. 28, 2011
4 stars because I agree with other users, as is it's too bland. I browned meat with onions, garlic, black pepper. Then added 1 1/2c beef stock & 1/2 c water, 1/4c Worcestershire, old fashioned gravy mix packet & frozen peas & carrots. Mixed together & put in 2.25qt casserole dish. 2nd layer was cheese slices so I didnt have to shred cheese. Tore up cheese slices & added to potatoes & topped dish with potato mix. Kids loved it!

Pumpkin Bread IV

Will make this again. Even after subbing applesauce for oil, this bread was still very moist. Made for potluck & 2 loaves were gone in no time. Very good & freezes well.

Best Tuna Casserole

Made some changes to this recipe... Didnt have canned tuna so I used canned chicken, frozen mixed veggies instead of peas, added 1/2 c of milk as suggested by others. Also added onion & celery, black pepper & minced garlic. For the cheese I used cheddar & muenster. Didnt have chips so I used French's fried onions as suggested by other user.

No Bake Chocolate Oat Bars

Reviewed: Jul. 12, 2011
These were good & not overly sweet. Made a double, 13x9 batch for a potluck. I reduced the butter as recommended by others. Used 1 1/2c unsalted butter, 2c brown sugar, 2 tsp vanilla, 6 c quick oats, 2c choc chips, & 1 1/2c PB. I put 2/3 of the oat mixture on the bottom, only 1/3 on top. Did not crumble much at all, think the secret is to cook the oat mix longer than 2-3 min, allowing the oats to soften more & stick together. Will make again as they were a huge hit at potluck, came home with empty pan.

Four Cheese Macaroni

Reviewed: Sep. 19, 2010
This was so good! I used milk because I didn't have half & half. I didn't use vegetable oil or drizzle mac & cheese with a tablespoon of butter. I added 1/4 tsp minced garlic & 1/2 tsp minced onion. I didn't have sharp cheddar so I used medium cheddar. I combined all the cheese, milk, eggs, & spices in the baking dish. Then stirred in the cooked noodles & baked for 1/2 hr. Will definitely make again & would serve this dish to company, however double the recipe because my family ate the whole thing!
