Silky Sweet Potato Puree

ABSOLUTLY FANTASTIC! This is a very easy dish. I made it as written, only sbustituting fat free milk & buttermilk. DELICIOUS! I served it with Chilean Seabass, fresh greenbeans with garlic and a blue cheese, arugula and pear salad. I can't wait to make it again. p.s. I had to borrow a food processor and this seemed to be what makes this dish so easy and "silky sweet". Thank you for this wonderful recipe!

Meatloaf with Fried Onions and Ranch Seasoning

I always try to make a recipe for the first time, exactly as it is given. Unfortunatly I was out of time and specific ingredients and had a request for a meatloaf dinner. My review is based on how the meatloaf turned out with my changes. I hope to try the original recipe soon. These were my subtitutuions: 3/4 cup of Italian breadcrumbs, 1/2 diced fresh onion and a full package of onion soup mix. Baked 1hr. 15 min. Wonderful, juicy and held its shape well. I topped it with a mix of 1/4c ketchup, 1/4c Worcestershire, dash BBQ & cream style horseradish for the last 15 min. As others have said, I too am not a big fan of meatloaf but this was a very moist and tasty dish. Thank you for the great recipe!

Cottage Cheese Chicken Enchiladas

With a few changes, this was fast, easy and 5 stars! 1. I used a rotisserie chicken and shredded the breasts. 2. Used fat free sour cream & 2% small curd cottage cheese. 3. Added a few chopped jalapenos from a can & scallions into the chix mix on the stove. 4. mixed cheese mixture & chix mixture together before spooning into warmed 6" flour tortillas (like another reviewer suggested, small pan on medium & warm tortillas 15-20 sec. on each side). 5. Sprinkled with shredded cheese, rolled tortillas. I didn't want to use all of the leftover chix mixture on top so I spread only a little down the center (plenty leftover for another day). Topped with 1 can of red enchilada sauce then sprinkled the rest of the shredded cheese. Each serving was plated over some lettuce, topped with a dollop of sour cream, guacamole, sprinkled with scallions & fresh parsley. Perfect! Thank you Annabell for a great recipe!

Coconut Rice

LOVE IT!!! My boyfriend and I fell in love with coconut rice at a restaurant and I decided to try it at home. I am only recently expanding my cooking skills and this recipe is perfect! Cheap and easy. I could only find light coconut milk but in my opinion turned out just as perfect as in the restaurant. I do suggest stirring the rice well just after adding to the milk and every 5 minutes afterwards to make sure the bottom does not burn and the liquid is coating evenly. My cooking time was just shy of 20min. The house smelled wonderful and the rice stayed sticky. I used a measuring cup to form the rice and to look great on the plate next to chicken simmered in Trader Joe's Thai Yellow Curry Sauce and some fresh green beans tossed with red pepper, basil and hot sauce. Hands down the easiest, quickest and best tasting meal to date!!
