Stephanie's Freezer Spaghetti Sauce

This was delicious! I added in the tomato paste while the sauce cooked in the slow cooker, let it cook a bit longer and it thickened up.

Rhubarb Muffins

These were pretty good. I made the following swaps to make them healthier: 1. swapped out the flour for 2 cups of white whole wheat flour and 1/2 cup of almond meal. 2. applesauce for the oil plus 2 tablespoons for flax meal 3. brown sugar for 1/2 cup Sucanet + a bit more to sprinkle on top 4. Added one ripe banana and a 1/4 of huckleberries. They baked up nicely. The only one in the house who didn't like them was my big dumb labrador who helped himself to one off the counter and immediately spit it out. Serves him right.

Cinnamon Swirl Bread

This was exactly what I was looking for when I went on the hunt for cinnamon bread. I swapped out the regular flour for King Arthur's whole white wheat and added a tablespoon of gluten per cup of flour. I also subbed olive oil for the butter and omitted the icing. It was delicious! I suspect most folks would prefer it with the icing, however.

Whole Grain Breakfast Cookies

Yep. These are fantastic. I omitted the walnuts and chocolate chips, increased the raisins to 1.5 cups and swapped the brown sguar for Sucanet. I also smashed them down with a spatula upon taking them from the oven as suggested. Delicious!

Simple Whole Wheat Bread

Really good bread! I also added 3T of gluten and it turned out great. I can't eat as much bread as this recipe makes so I divided the dough in half. With one half I made a large loaf of bread. With the other half, I took out about 1/3 and made 5 hamburger buns and rolled the rest into cinnamon rolls.

Fruity Granola Bars II

Excellent recipe! I uploaded the picture of the bars prior to cutting them. I am a "clean" eater so I, of course, made some modifications. Instead of butter I used Smart Balance Light, I swapped the honey for agave nectar and the brown sugar for sugar in the raw. I also added 1/2 cup of flax meal and only used dried cherries and cranberries because that is what I had on hand.

German Chocolate Cake Frosting

This was my first attempt at homemade german chocolate frosting and it turned out amazing! I am a scratch cook who is extremely health conscious and this was a special Valentine's treat for my sweetheart to top the homemade healthier chocolate cupcakes I made. I used sugar in the raw in place of the brown sugar (I don't keep any type of refined sugar in the house) and fat free evaporated milk. I also swapped out the pecans for chopped almonds because I was out of pecans and it still turned out great. I cooked it on medium until it started to bubble and then I reduced the heat a notch and stirred until it thickened. Yum!

Grilled Pork Tenderloin

Absolutely delicious! I followed the recipe exactly as shown and it turned out great! I had been trying to find a tenderloin recipe that I really liked for years and had no luck until I found this one.
