Zucchini Pancakes

Great recipe! To make it more pleasing to my kids, I peeled the zucchini before grating it, subbed applesauce for the oil, omitted the butter, and added 1/2 cup chocolate chips to the batter. Huge hit with this mom and her kids!!! Thanks for sharing the recipe. :-)

Homesteader Cornbread

Finally! A cornbread recipe that tastes amazing! It's the perfect mix of light / fluffy, moist, and the much looked for cornbread texture. I'm done searching: this is our cornbread recipe from now on. I only made one change due to dietary needs.....I used plain rice milk instead of regular milk. Thanks for sharing this fabulous recipe.

Slow Cooker Potato Soup

A good basic recipe that you can tweak to your own liking. I, like other reviewers, assumed 8 CUPS of potatoes were to be used. :-). I omitted the onion, used 7 cups of vegetable broth instead of bouillon and water, and subbed plain rice milk for the milk. Additionally, I added 3 carrots that were peeled and diced, 3 stalks of celery that were diced, 10 slices of cooked turkey bacon that were chopped, 2 tablespoons each of oregano, basil, and thyme. I served the soup in sourdough bread bowls. Dinner was a success! Thanks for sharing the recipe.

Chocolate Truffle Cookies

I made these for myself and a group of my friends: they were a hit! I will echo the sentiment that these are only for the serious chocolate lover. They are so rich....mmmmmmmmm. The only change I made to the recipe was to sub Earth Balance for butter to make them dairy free. Thanks for sharing this fabulous recipe!!

Baked Doughnuts

My 12 yo DD and her book club friends made these today. They were a hit! Light, fluffy, and so yummy right out of the oven. I made the following changes: subbed lemon juice with plain rice milk for the buttermilk and Earth Balance for the butter. Also, they frosted them in a dark chocolate frosting. We will certainly make these again.

Quick and Easy Brownies

One of the best recipes on this site. I've made these countless times and they always get rave reviews. I've made many variations: used Hershey's Special Dark cocoa instead of regular and added 3 teaspoons of instant espresso powder. Switched mint extract for the vanilla and used mint chips instead of walnuts. Switched orange extract for the vanilla and added some orange zest. The list goes on and on! These are so easy and so yummy. Thanks for sharing this recipe.

Flourless Chocolate Cake I

Oh. My. Goodness. This cake is incredible. When you eat this decadent delight, you are not overwhelmed with sugar, frosting, or anything of the like....just beautiful chocolate. This cake does not whisper chocolate, it screams it loud and clear. What a fabulous recipe. The only changes I made were the following: I subbed coffee for water, Earth Balance for butter, Egg Beaters for eggs, and a 10" springform pan for a regular cake pan. My only regret is that I can not award this recipe more than 5 stars.

Ground Turkey Noodle Bake

My family enjoyed this, but we felt it need more flavor. Maybe more garlic, oregano, basil, thyme, etc. would have helped? All in all, a nice dinner that would make a great meal to take to a new Mom or neighbor. Thank you for the recipe.

Greek Lemon Chicken and Potato Bake

This was an enjoyable recipe that I followed to the T. Perhaps it's just our personal preference, but I would parboil the potatoes prior to roasting next time. All in all, the chicken was moist and lemony. Thank you for the recipe!
