I'm a wife and homeschooling mother who has learned to love life after the husband retired from the military. Our eldest child was diagnosed with Crohn's in October 2010. Since then, we have learned a whole new way of life and cooking. Dairy free can by yummy!!!

Zucchini Pancakes
Great recipe! To make it more pleasing to my kids, I peeled the zucchini before grating it, subbed applesauce for the oil, omitted the butter, and added 1/2 cup chocolate chips to the batter. Huge hit with this mom and her kids!!! Thanks for sharing the recipe. :-)

Homesteader Cornbread
Finally! A cornbread recipe that tastes amazing! It's the perfect mix of light / fluffy, moist, and the much looked for cornbread texture. I'm done searching: this is our cornbread recipe from now on. I only made one change due to dietary needs.....I used plain rice milk instead of regular milk. Thanks for sharing this fabulous recipe.

Slow Cooker Potato Soup
A good basic recipe that you can tweak to your own liking. I, like other reviewers, assumed 8 CUPS of potatoes were to be used. :-). I omitted the onion, used 7 cups of vegetable broth instead of bouillon and water, and subbed plain rice milk for the milk. Additionally, I added 3 carrots that were peeled and diced, 3 stalks of celery that were diced, 10 slices of cooked turkey bacon that were chopped, 2 tablespoons each of oregano, basil, and thyme. I served the soup in sourdough bread bowls. Dinner was a success! Thanks for sharing the recipe.
