Blackberry and Blueberry Pie

The flavor was good, the crust was good, the only thing I should have done was thaw out the frozen berries before using them--it turned out too runny even adding a TBS. of cornstarch in addition to the flour. But, that was my fault, otherwise, excellent!

Brown Rice and Black Bean Casserole

I have made this recipe a number of different ways and it is always good. I usually double the rice, add yellow squash, and double the carrots. You can make this totally vegetarian and it's still so delicious and filling.

Homemade Pancake Mix

This has become a normal staple in our pantry. Much cheaper than buying pre-made mix and no preservatives. You can use milk or buttermilk, and I have even used ground flax seeds (2 TBS.) in place of the egg, always yummy.

Peach Cobbler

I can't believe I had never made a peach cobbler until this one, it is sooo good! I have made it once a week for breakfast since I found this simple recipe. I used the large (26 oz.) can of peaches instead of the 16 oz. size. So yummy!

I have made this several times for my family and also for dinner guests. I use brown rice and add cumin as another guest recommended. A must have side for most Mexican style dishes.

Orange Streusel Muffins

I wanted to use up some marmalade I had leftover so I decided to try this recipe and was very pleased. I didn't have any eggs, so I used 2 TBS. ground flax seed for a replacement, and I used coconut oil in place of vegetable oil. They turned out light and fluffy with just the right amount of sweetness. These are definitely worthy of serving to friends or bringing to a brunch.

Overnight Blueberry French Toast

Great dish when you have company overnight, you can make it the night before and just throw it in the oven in the morning. Also a great way to use up old bread.

Homemade Vanilla Extract

Until I saw this recipe on here, I would have never thought this was possible to make your own vanilla! It's expensive to buy and it's still not top quality from the store. This is great b/c you can continually add to the bottle as you use it up. Also makes great gift in individual little bottles for Christmas.

Apple Crisp II

I made this for Thanksgiving and it was sooo good. Took the advice of others and double the topping and am so glad I did. I only used half of the amount of water poured over the apples and it was perfect. I think I used fiji apples, not the granny smith ones, but I just sliced them a bit thicker and it was fine. Also added some nutmeg along with the cin.

You can't fail with this one! The soy sauce makes it all salty and good, and the garlic just infuses a delicious flavor into the chicken. Great recipe to fall back on.

This was easy to make and used ingredients most people have on hand. I added diced onion and celery and left out the mushrooms. Tasted even better eaten as leftovers the next day.

Buttermilk Pancakes II

These were super fluffy and light! I added a little lemon juice like someone else had suggested and let it sit in the fridge until morning. I prefer wheat pancakes b/c they are better for you, but then I am the only one enjoying them. My hubby and 5 yr old loved these (and secretly so did I ;)

Baked Oatmeal Squares

These turned out really yummy and I especially liked the short cooking time compared to other baked oatmeal recipes. I used applesauce instead of oil, 1/4 C brown sugar, 1/4 C white sugar, and added one apple cut up, also a touch of nutmeg. I mixed it up the night before and just poured it into the pan in the morning and popped it into the oven. Healthy, tasty, and quick, what more could you ask for.
