Baked Pork Chops II

Reviewed: Dec. 1, 2008
This is a great recipe on pork OR thinly cut chicken. If you don't like pepper very much then use half the suggested amount. I also excluded the mustard a few times and it turned out fine - otherwise I followed the directions exactly and it was great. Very quick and easy - a bi-weekly staple in my home!

Anniversary Chicken I

Reviewed: Dec. 22, 2008
This recipe is SO good! Just marinade the chicken in teriyaki for at least an hour before hand - the longer the better. DONT skip the ranch, I don't like ranch dressing but I used it anyway (just a thin layer on each chicken breast) and it REALLY adds to the recipe in a good way. Also, put the cheese and bacon on just for the last 5 minutes if you like it gooey, 10 minutes if you want it a little crisp. GREAT RECIPE!

Pork Tenderloin Marinade

Reviewed: Oct. 17, 2010
The best pork chops I've ever made. And I've tried a lot of things with pork chops. This recipe is even better because its SO simple. Be sure to use thick-cut pork chops and marinade for no longer than 2 hours. Grill on medium until just cooked through and you're in for an awesome dinner!

Bev's Orange Chicken

Reviewed: Jul. 14, 2011
I made this with chicken breast and did not like it at all. It was edible, but I won't recommend or make it again. I even followed some tips from other reviews and seasoned the chicken with salt and pepper and a pinch of ginger. It was moist and flavorfull, I just did not like the flavor or the texture of the chicken. The only way I see this being a successful recipe is if it was made with dark meat which was marinated in the sauce overnight and then browned in a pan on stove.

Grilled Asparagus

Reviewed: Nov. 14, 2011
Nothing special. I would have added some garlic or something. And I cooked it for about 3 minutes and it was crunchy but didn't seem cooked enough.

Grilled Lemon Herb Pork Chops

Reviewed: Nov. 14, 2011
Very simple and good. I only marinated for about 45 minutes and I did not use the sauce to baste and they still turned out good. Only thing I did differently was rub the chops with the salt, pepper, and oregano instead of adding it to the marinade.

Gourmet Mushroom Risotto

Reviewed: Nov. 14, 2011
This was REALLY good EXCEPT for (BIG EXCEPTION) no warning on how salty it is! I did not add ANY salt but I used Campbell's chicken broth and the dish was almost inedible because it was so salty. And I put salt on everything! I will make it again with LOW SODIUM CHICKEN BROTH!!

Awesome and Easy Creamy Corn Casserole

It was soupy. Needs tweaking. Be smarter than me and take reader's notes on how to make it tastier before you make it!

Better-Than-Ever Beef Enchiladas

Reviewed: Oct. 4, 2013
There are WAY better enchilada recipes out there. Don't waste your time with this one. Typical enchiladas served with rice, refried beans, sour cream - no mention of these items in this recipe or to be served with this recipe. It was edible but not flavorful enough. Won't make again.

Black Bean and Corn Quesadillas

Reviewed: Oct. 4, 2013
These are DELICOUS. The ONLY tweak I made was adding chicken seasoned with Goya Adobo. They even made great leftover lunch on second day. Everyone raved and I can still taste them! Very simple, too.
