Baked Ziti II

I'd have to give this a five for taste, but a three for texture. The layered method has more texture where this is all stirred together in a big mish-mash. Next time I will keep the ricotta/egg mixture and the sauce separate as I put the pasta in the pan.

Seasoned Short Ribs

I added a 28 oz. can of diced tomatoes in place of the tomato juice and the recipe still cooked down into a rich broth. I would omit the cinnamon and cloves next time to enjoy the full effect of the taste of the short ribs. This is certainly a dinner to make for company! My fiancé was blown away by the taste and tenderness.

The Hudsucker Pasta

Too much cream cheese for my liking. Next time I'll add the entire jar of sauce and use a milder cream cheese and half as much.

Momma's Cornbread Dressing

I found this too dry for my taste and not enough flavor. If most of the broth was from boiled chicken parts, it would be excellent. Dressing needs chicken fat to really shine, and the standard broth does not impart enough.

Aunt Fanny's Squash

I believe the reason I didn't like this as much as I should is the preparation of the squash. After we tried it from the recipe, I took the leftovers and cut up the squah and onion, added another beaten egg with more pepper and baked it more. It was less runny. I'll omit the milk next try and see if I get more of a casserole effect.

Lazygirl's Ground Turkey Stroganoff

Save yourself the headache and DOUBLE this. It is so good that you will want leftovers. My Mom said she could eat the gravy over rice and still love it. I never cook with ground turkey, but it absorbs seasonings so well that you will prefer it over red meat.

Vegetarian Tortilla Soup

I have never eaten any version of Tortilla Soup. I made it tonight for my Mom, brother and future sis-in-law. The recipe makes 12 servings, but after all the second helpings, there were only a few small servings left. You have to try this! LOVED the recipe. Mom and I need protein in each meal so I did add rinsed black beans.

Pork Chops with Raspberry Sauce

Boilermaker Tailgate Chili

I made this for my family while visiting over the New Year. It is good, but as it sits two days in the fridge, it gets hotter. So if you make it for a one day or overnight meal, it's quite good.

Turkey Brine

I've never been a white meat lover, but I've switched. This was THE best breast I've ever tasted and it was from a frozen turkey. Simple to make. Let time do the work. I brined this one 15 hours for a 15 lb whole turkey. Next year, I plan to buy the biggest breast I can find and brine only that. It took only 2 hrs and 20 minutes to cook and the skin was perfectly browned and crisp with no added butter or salt to the turkey. I only added a light sprinkling of freshly ground black pepper.

Rosemary Roasted Pork Tenderloin

I cooked this exactly as the recipe is written. My neighbors were grilling ribeye steaks. I sliced off enough medallions for all five to taste asking for an honest opinion because I wanted to make this for my Mom and brothers. All gave it a thumbs up. The next night one of the neighbors said to me in privacy I'd eat that tenderloin any day over a ribeye steak!

Rolled Dumplings
