Take The Night Off Slow Cooker Pineapple Chicken

My 13 y.o. turned his nose up at this, which is unusual. I thought it was okay but I think in the future I will go back to stir fry for my Chinese main courses.

This was the best new dish I have tried in a while. I forgot to add the vinegar but it was still delicious over some brown rice. I am going to add some vinegar when I have leftovers and see how I like it. I think it will be a nice addition. It is such an interesting mix of flavors.

Slow Cooker Green Beans, Ham and Potatoes

Nice dish. Would make a hearty side dish, or even a main course, which is how I had it. Goes good with some cornbread or sourdough rolls.

Awesome Slow Cooker Buffalo Wings

This was easy and pretty tasty. I found they browned up nicely if you follow the instructions and bake at 400 for 30 min. I made as directed except I did one hour on high, then one hour on low as many suggested. I also dunked them back in the slow cooker sauce about halfway through the oven cycle.

Slow Cooker Butter Chicken

I followed the recipe exactly, even went to a small local Indian market for some of the ingredients I thought I might have trouble finding at the grocery store. It had a nice texture but I thought it was bland. I eat in Indian restaurants quite a bit and love most of the dishes. I don't think I've ever had butter chicken before. It may be that I am just not a fan of that particular dish.

Slow Cooker Cilantro Lime Chicken

This was very good. I followed another reviewer's suggestion and when I got home I used this to fill enchiladas, adding a little shredded cheese. Rolled them up, topped with canned sauce and more cheese, put them in the oven, and 20 minutes later I had some very tasty enchiladas. This will probably replace my other enchilada recipe. This is much easier.

Anniversary Chicken I

I was surprised how good this was. I used thinly sliced chicken breasts and only browned them for about one minute on each side, and baked for about 20 minutes. They were perfectly done. As others suggested, make sure you use a teriyaki baste/marinade, and not regular teriyaki sauce. The baste is thicker and I think adds more flavor. Served with some sauteed broccolini and small roasted potatoes.

Chef John's Caramel Chicken

This was the best recipe I have tried from this place in a long time. I used the ingredients exactly as specified, except, believe it or not, my Kroger was out of jalapenos. I used some Anaheim peppers but of course they are not as hot, so I added a little red pepper flake. As others have said, watch the video before you make this and you will get some good tips and a feeling for what the chicken should look like in the first step. Make sure you use plenty of heat on the stove. It took me a little more than 12 minutes to get it caramelized. You are looking for a mahogany color and caramel starting to stick to the pan, with most of the liquid gone. Served over brown rice. Will definitely make again. The video warns you not to substitute chicken breasts as they tend to dry out. I'm glad I went with the thighs as directed. Very moist and flavorful.

Quick and Easy Chicken Noodle Soup

I whipped this together because I had a cold and chicken noodle soup sounded good. I pretty much doubled the vegetables and the chicken as well, but kept the liquid the same. I think the consistency was perfect this way. I simmered longer than stated and used raw chicken, which I added maybe the last 40 minutes. I also used whole wheat noodles.

Fruity Curry Chicken Salad

I'm not a huge fan of chicken salad but this is very good. I used reduced fat mayo. My GF, who is a huge fan of chicken salad, really likes it, so that says a lot.

Karen's Slow Cooker Chicken Fajitas

Very good. Of course, didn't bother with the silly liners. My only regret is that after serving, I left the rest to cool on the counter a bit and fell asleep on the couch so had to throw out the leftovers. I used the taco seasoning mix from this site instead of the package fajita seasoning.

Best Baked French Fries

I used Russets and tossed them in the sugar in a mixing bowl, then into a colander for a rest as directed. Dried them with some paper towels then back into the bowl to toss with the salt, pepper, and garlic powder. I baked them on a wire rack over a cookie sheet so did not need to turn them. I make oven fries a lot and I think I prefer the simpler seasonings in this recipe. I also think the sugar definitely makes them more crispy.

Quick Szechwan Sauce

I used this as a marinade for some chicken I had cubed. I drained and saved the sauce, then I stir fried the chicken and some snow peas, carrots, onion, bell pepper, and frozen green peas. I added the sauce back in to the wok and simmered for a couple of minutes for food safety, and thickened with some corn starch. I enjoyed it very much. Not as spicy as I thought it would be. I used fresno peppers.
