Downeast Maine Pumpkin Bread

Delicious! I took the advice of another user and reduced the sugar from 3 cups to just 2 cups and used 1/2 cup vegetable oil and 1/2 cup unsweetened applesauce. It was a HUGE hit! I like my bread to be more like bread and less like cake - not super sweet, just sweet enough - and this really hit the spot! If you have the opportunity to bake this in a convection oven, keep the temp at 350 but bring the bake time down to about 30 minutes. Mine was done in just less than 30, so if you choose to use convection, check it at about 25 minutes w/ a toothpick. I can't believe it cut my baking time in half! Overall, it was fabulous! I will DEFINITELY make again!!!

To Die For Blueberry Muffins

Delicious! I used frozen blueberries, not fresh, so I had to defrost, drain, and rinse them before mixing them in... PERFECT! They turned out moist and delicious, and the topping is great too! DEFINITELY will make again!

Morning Glory Muffins I

Very good! I didn't have wheat germ or nuts on hand, so I just made the muffins without them. Overall I'm very impressed - they are a relatively healthy, very tasty muffins - a nice contrast to what I usually bake ^_^

Black Bean Vegetable Soup

This was DELICIOUS. I'm a fan of Panera's black bean soup, and I was looking for a recipe to replicate it... this is MUCH better. I didn't have any carrots, so I went without, but I used frozen corn instead of canned - personal preference. ALSO... this was my major change, and it was out of laziness. I only had a large (28oz) can of tomatoes, and I didn't want to waste the other half of it... and I know I won't use soon, so I Just doubled everything else (had extra beans on hand, onions garlic n spices too) I didn't have extra broth, so I only used 4 cups instead of 8... I was very happy with this because it would've been WAY too watery with the recommended amount... it was HEARTY and TASTY! Added only 1/4 the chili powder tho... and added a healthy amount of tabasco! Nice bite! Healthy and quite tasty! This is DEFINITELY a keeper!!!

Aunt Anne's Coffee Cake

Very good! I was looking for a new coffee cake recipe... the one I usually use is a sour cream coffee cake, but I didn't have sour cream or walnuts on hand, so I used this. It turned out very well - it tastes great! I added a bit of cinnamon to the batter as well, which was nice. Also, I ran out of white sugar, so I only used about 1/4 cup white sugar for the topping, the rest brown sugar, and entirely brown sugar for the batter. It turned out well - no problems because of the different kind of sugar. Overall, it is super easy to make and very delicious!

Chicken Pot Pie IX

Insane! This stuff is GREAT. I added extra chicken (I used maybe a pound and a half) and it was still good. If you only have one pie crust, or if you're trying to cut down on the fat, you can always just pour he chicken/veggie mixture into a round casserole dish and put a pie crust over it. (I did this because I had too much chicken mixture for the pie crusts I bought) Still fabulous! Will DEFINITELY make again! 11-23-09 Made this again today, and I just have to emphasize how AWESOME it is. It's better than anything you can get in the stores or any restaurant for that matter. Outstanding.

Delicious Raspberry Oatmeal Cookie Bars

Yesterday, I had a crumble bar from Starbucks, but I was so disappointed I was inspired to find a recipe to make my own. This was the right choice! They were a HUGE hit at my house - I can't believe how easy they were (and how impressive they looke!) My favorite part was that I already HAD everything in my house - sugar, flour, butter, oats? I didn't have to go out to buy extra ingredients! I only had strawberry jam on hand and used that instead, but it is still INSANELY good (and so easy!!!) Next time, I'm going to try blackberry jam. Wow, these are winners. 5 stars all the way baby! ^__^

Banana Split Cake

This recipe is DELICIOUS!! Don't pass it up!! What makes it even better is that you can use fat free cool whip, fat free/low fat cream cheese, and skim milk and it'll taste EXACTLY the same! (I swear it, I really promise. All of the banana, vanilla, and pineapple make you forget there's so little fat!! HERE'S A TIP:::: Putting on the cream cheese layer will make you want to scream and pull your hair out!! If the crust isn't perfectly cool and pressed down enough, it'll pull the crust up when you try to spread it. When you have the cream cheese & sugar mixing, add a few tablespoons of milk to thin it just enough to make it spreadable. Then spoon it into a large ziploc bag and snip off the end. Pipe it onto the crust, going along the edges so it touches the pan, and in lines across it. Spread from one line of cream cheese to another, so the crust won't pull up. ENJOY!! (I know you will!!)

Guacamole

I'm not a guacamole person, but I made this for some friends. As the recipe reads, it's a little bland. **I also DOUBLED the recipe so PLEASE NOTE that the changes I made were for twice this amount!** Juice of 3 limes, not 2. Add about 1/2 - 1 tsp cumin 6-7 Dashes Tabasco sauce Salt to taste Even I liked it! My friends couldn't stop eating it - one girl told me it was as good as her mom's. (She grew up in Mexico, so that's DEFINITELY a compliment!) Delicious!!!

Chewy Caramel

What a delicious recipe! GREAT suggestion to use parchment paper - it worked beautifully! My brother said it tasted too buttery, but I think it's great. I don't have a thermometer, but I've made a few different types of candy before and it isn't hard to tell where a batch of candy is temperature-wise based on how it reacts in cold water (soft ball, hard crack etc.) This one is especially easy because all you have to do is test it and when it feels like a "good" caramel texture, you're done! (Unlike fairy food, which isn't exactly the same because you add baking soda and alter the texture after you test it.) Wonderful! Will make again!

Apple Strudel Muffins

Wonderful! The batter is sweet enough to still be a muffin, but the cinnamon struesel topping adds just a little extra dessert-y feel. I DID add some cinnamon to the batter too, just to make sure the muffin and its topping go well together. I love them. Thanks for the great recipe!

Great Mac and Cheese

I only rate it as 5, but I made a few changes. When I began the recipe, I assumed that I should have the pasta cooked first. I realized this about halfway through the process... right after I added the milk. Although I haven't tried the recipe exactly as directed, it worked for me. It would work (if you cook the pasta 1st) to add only 2 cups of milk, increase the amount of cheese (I'm a cheese lover, so I added an extra cup) and I also minced 2 cloves of garlic and sauteed them with the onion. Personally, I prefer co-jack cheese. Delicious - it's a "grown up" mac and cheese, but it still holds true to a classic mac and cheese kind of flavor! (no mustard, bacon, other types of cheese etc) Will definitely make again!

One Bowl Chocolate Cake III

All I need to say is WOW. This is the ONLY chocolate cake recipe you need! I know it said that the batter would be thin/runny after adding the water, but it still looked TOO runny... I thought, "What the hey, I'll bake it anyway." It is SO moist and DELICIOUS! This only reinforces my decision to quit cake mixes - I've never looked back! :) I'm not a chocoholic, so I went with a vanilla frosting... it is a recipe I got from my grandma, who got it from a friend befoe my mom was born. 2T and 2t flour 1 cup milk 1 cup butter (2 sticks) softened 1 cup sugar 1 1/2 t vanilla. Mix all of the flour with a little milk until it is smooth. Mix in the rest of the milk and heat on the stove over medium heat *WHISKING CONSTANTLY* until it is thick and smooth. Let cool. In a mixer (or w/ a hand mixer) cream the butter and sugar. While mixer is still going, add th cooled milk mixture a little at a time. Beat until fluffy. Add vanilla and beat until incorporated. This is the PERFECT frosting - not so sweet your mouth hurts, just creamy and perfect! Give it a try! (But give Mrs. Holly all the credit for her fabulous recipe!) ^_^

Italian Spaghetti Sauce with Meatballs

Outstanding! I love spaghetti but since my favorite sauce was discontinued, I needed a new one (and I'm picky). This is it! It's delicious even without the meatballs (although I made it with.) A time saving tip... I got the sauce started to thepoint where it needed to "simmer for 90 minutes" then made the meatballs and put them into a 9x13 baking pan and baked them for 25 mins at 350 degrees, turning them once. By the time they were done, I blended 3 cups of the sauce in a blender and added it back to the pot. I just added the meatballs in and they were wonderful! Plenty of compliments without the 2+ hours. Delicious!! Thank you!!
