Veronica's Apple Pancakes

Easy and quick, I chopped 1 1/2 Granny Smith apples and put them for a whirl in my food processor. I didn't peel them and I really liked how the green color showed throughout the pancakes. My family enjoyed them, and next time I will double the amount of cinnamon, and maybe even add some pecans or walnuts.

Tuna Salad Crescents

Quick, easy, and good! The sweet pickle relish goes very well with the slight sweetness of the crescent rolls. I made a very simple tuna salad with mayo, diced celery, grainy dijon, and pepper. These are great for lunch!

Creepy Mini Pizzas

We made these at a get-together we hosted for the neighborhood kids and they LOVED them! Some of them used unconventional toppings, but everything was eaten. Thanks for the adorable idea--they were delicious also!

Spooky Homemade Marshmallows

I can't believe I just made marshmallows. These are sweet billowy clouds of puffy goodness! Unlike any store-bought marshmallow I've ever had, these tasted delicate and were softer. My kids think I'm a superstar! Be sure to grease the pan very well or the mixture will stick--this makes it more difficult to remove from the pan when they're dry enough. Since I made bones for Halloween, I dipped my cutter into the powdered sugar/Argo cornstarch mixture before making each cut, pressed down hard, and wiggled slightly to ensure it went all the way through. These are truly a delight--yumm!!!

Caramel Corn Treat Bags

Bacon and Caramelized Onion Rolls

WOW are these indulgent! This was my first time making a 'rolled' yeast roll, and they turned out great. I think my roll before I cut the slices was a bit too long, so I would recommend making your dough rectangle on the conservative side so your rolls won't seem too big for the muffin tin once it's filled. But boy, these were GOOD! My husband ate 2 and I served them with vegetarian soup since these have lots of cheesy bacon goodness. I'd love to make them again if I have the time. THANKS for a wonderful recipe!

Bacon, Egg and Cheese Sandwiches

We really liked these! I scrambled the eggs with salt, pepper, and a little half and half until just done and they were wonderful, and the cheese inside made everything yummy and melted. They hold together well in a portable little package, so I could see my daughter grabbing one of these before heading out the door to school if she's in a rush. I had a little trouble making them into a crescent shape, but was able to get them rolled without losing the filling--just stuff the sides back in if needed.

Premium Pecan Pie

*The ingredient list is missing three eggs. Thanks to a quick thinking friend who helped me figure this out, this pie turned out to be delicious and worthy of 5 stars! It took no time at all to assemble, and was so much easier than I thought pecan pie would be. I'm looking forward to making it again for friends. Thanks!

Renaissance Stuffed Mushrooms

I've made these lots of times now and they are always well-received! I skip precooking the mushroom caps and they turn out just fine. I've found that a suitable substitute if you don't like port is 1 tbsp of good balsamic or red wine vinegar to give it a similar tang (I prefer the port though!). These are great for year round entertaining--thanks!

Pumpkin Spice Bread

Really good, and my girls couldn't wait for them to bake! I did make muffins for portability, and baked them for 35-40 minutes. I had some pepitas and decided to top half the batch with them also. Thanks, I love that these use no oil!

Cornbread Stuffing with al fresco® Sweet Apple Chicken Sausage

I love stuffing with sausage, cranberries, and apples so was excited to try this. The sweet apple chicken sausage is a nice addition, but it does make it on the sweeter side--I liked it! I did dice the sausage instead of slicing it because it seemed like having larger slices would have been awkward and cheated by using bagged cornbread stuffing. The only complaint I have is that it would be very dry if only 1/2 cup of stock is used in the original presentation with normal cornbread. Add more to suit your taste and prevent overdryness.

Easy Weeknight Bacon Mac 'n Cheese

I'll give this 5 stars due to flavor. I left out the "cheese loaf" since I don't have it in the house and added a bit more shredded cheddar. This is perfect for busy weeknights and got my daughter out the door for soccer with a full tummy and no complaints. Thanks, Progresso!

Good for a quick & convenient weeknight meal, just add a side of steamed broccoli (or your favorite vegetable). Don't be afraid of the amount of sauce you end up with in step 4, once you add the spaghetti and chicken it coats it and doesn't seem soupy. I liked that I had most of the ingredients on hand--just add Progresso!

Pizza Primavera

It is convenient and quick, and it's fun to dip the pizza in the sauce. I used fresh vegetables (yellow, orange, and red peppers and red onion) and sauteed them for a few minutes to soften them up before topping the pizza crust. Although it's not our all-time favorite pizza recipe, this would be a good option for a busy school night. The kalamata olives were a must for extra flavor!

Slow Cooker Buffalo Chicken Sandwiches

Oh my goodness, these are so delicious! I topped ours with ranch dressing, and next time I might dice some celery also to add to the sandwiches. My husband & I couldn't get enough. I made this with Scott's Buffalo Wing Sauce from here and would not change a thing. I look forward to making this LOTS during Football season!!

Scott's Buffalo Wing Sauce

This was delicious! I used it to make the Slow Cooker Buffalo Chicken Sandwiches here and my husband and I just loved it. I did reduce the butter by half to get a more concentrated flavor in my slow cooker, but YUM! This will be my go-to wing sauce!

Homemade Pizza Sauce Made Lighter

My daughter enjoyed this but we don't have to sneak veggies into her foods. It is a savory sauce since it has no added sugar, and I liked that. It makes a lot and would be a good start to a spaghetti sauce also.

Goat Cheese Apple Walnut Pasta

Yum! This would be an excellent Fall side and may even make an appearance at Thanksgiving this year! The flavors work so well together, and you have to like goat cheese to enjoy this pasta. Ditalini pasta is a fun shape and really holds the sauce. Another great one, Chef John, thanks!!
