Sweet Candied Orange and Lemon Peel

I loved these and wish I had made a quadruple batch, although it would've taken all day! I followed the directions, and used a vegetable peeler to peel the skin off of the oranges, then sliced them into thinner strips. Since they were thin, I boiled them once for the 20 minutes as stated, then in the sugar syrup for approximately 10 minutes. I strained them out of the syrup using a fine mesh strainer (and a spoon to help), saving the simple syrup. Once drained, I laid the peel on wax paper to dry for about an hour, then rolled and pressed them in sugar. They turned out beautiful, and delicious. I can't wait to figure out how to use these candied peels, if I can stop eating them! As stated, SAVE your syrup to sweeten coffee & tea, and to brush on cake layers to combat dryness--this syrup would be especially good on a poppyseed cake.Also, lime peel did not work for me. They turned pretty hard, and although still edible, they did not have the same nice texture the orange peels had. Can't wait to try this technique with lemon & grapefruit!

Homemade Black Bean Veggie Burgers

These were delicious and relatively easy. I took some advice of other reviewers and mixed everything in the food processor, adding more breadcrumbs until the mixture was thick enough to form into patties. Instead of serving them on buns, we topped them with pomegranate guacamole and/or sour cream mixed with mango salsa. Wonderful vegetarian meal!!

Oatmeal Chocolate Chip Pancakes

As written, these are WAY too runny. I wonder if it should read 1/2 cup of milk instead of 1 1/2? I was able to salvage them by adding 1/3 cup more flour, 1/4 cup more oats, some ground walnuts, and a few extra mini chocolate chips to the tops while cooking. After the modifications, my family all enjoyed them!

Pistachio Crusted Chicken Breasts with Sun-Dried Cherry and Orange Sauce

This was perfect as written! My entire family loved it. You have to allow the sauce to cook long enough to reduce or else it will not be thick. This is going in my 'Family Favorites' file, and it would be fantastic to serve on holidays and for company. 5 stars all the way!

Turkey and Quinoa Meatloaf

If I could give this 10 stars I would--This is my family's new favorite meatloaf! You can't go wrong by using whole grain instead of breadcrumbs. The quinoa gave this a fabulous bite and texture, and it is seasoned extremely well. I added chives from the garden for color, and next time, will probably top it with BBQ sauce. **It's really important to not use ground turkey breast because it will turn out too dry and colorless. A winner for sure! Thanks for sharing!

Jalapeno Cheddar Homesteader Cornbread

Chicken Calvados

This was good, but the sauce is veeerrrrryy rich. I loved the creativity of the recipe, as I have never had these ingredients together before, but I can't give 5 stars because my family didn't love it. It was a beautiful entree and to present it, I didn't add the chicken to the sauce, but spooned the thickened mixture over the chicken. If I could rate it 4.5 stars, I would. Thanks for sharing such an interesting recipe!

Amazing Whole Wheat Pizza Crust

Fabulous! I did use all whole wheat flour and it turned out great--enough for 2 generous pizzas. Chewy, versatile (you could add some Italian herbs and/or grated parmesan for extra flavor), and easy. I LOVE the fact that there are minimal ingredients. Why buy premade crust again? Thanks for sharing!

Baked Apples with Mint

I did alter the recipe a little bit--not the ingredients, just the method. I only had 2 apples for the 3 of us, so I cut them in half, cored them with a tablespoon, and filled them with the raisin mint mixture. My daughter LOVED these, and it's a creatively different way to use up some mint from the garden. We will make these again, they were delicious!

These are great! I did take the recommendation of other reviewers and mixed half mayo and half cream cheese for the base, and I added chopped shredded lettuce to make it a 'true' BLT. Since cherry tomatoes are just out of season, my husband found Campari tomatoes, and they worked beautifully.

Chinese Broccoli Slaw

This is our family's favorite slaw recipe. I use whatever almonds I have on hand (pictured with sliced) and exchange brown sugare for white, as I feel it gives a better flavor. Be sure to use bagged broccoli slaw (found in the produce section near the bagged shredded cole slaw) and not broccoli florets. This is what makes the recipe! We will make this again and again, it's always a favorite and is delicious served with barbecue.

Perfect Crab Cakes With Green Onions

I loved these--not too much filler, they held together well. The key is pressing them together to get rid of as much air as possible before frying them. I had no trouble at all keeping them together. They were crunchy, even without adding panko. Following the recipe and preheating the oil for 10 mins. made the difference! I served these with Mustard Cream Sauce also from this site, and they were fantastic.

Rosemary Chicken with Orange-Maple Glaze

YUMMMMM! this was amazing, and a definite addition to my family's favorite file. We wished there was more when dinner was over. Served with baked potatoes and asparagus, and this would make an excellent meal if serving company. Definitely use real maple syrup! Thanks for sharing!
