Apple Cranberry Relish from Mott's®

Very simple and tasty. I recommend pulsing the ingredients together instead of blending until smooth to maintain some texture. Would make an easy addition to your holiday table.

Amazing! Sweet and salty goodness. I made these for my coworkers' birthdays and they were a huge hit. I topped them with crumbled bacon sprinkles. Yum!!!

Bacon Chicken and Dumplings

PAM® Sopapilla Cheesecake Pie

YUMMM! These are so easy, and so good! If you want to make them super-easy, use one can of dough, lay it out on a large sprayed baking sheet, press half of it down slightly, spread half of your cheesecake filling on the pressed side, and fold over the remaining half of dough to top it, stretching it slightly to fit. Then, repeat. Instead of using butter, I sprinkled the cinnamon sugar over the top, and sprayed it with a little more PAM. They baked beautifully! For perfect squares, cut with a pizza cutter once completely cooled.

Johnsonville Sausage Balls

I had to make a couple of small changes to this recipe, but it's so versatile that you can adapt it to suit your family's tastes. I knew my kids wouldn't like hot sausage and mushrooms, so I used mild Italian sausage and diced apples instead of mushrooms. Ahhh-mazing! I know I would love this recipe with the hot sausage and mushrooms, and I'll make that in the future. I can imagine many possibilities--sneak chopped spinach or kale into these for added nutrients. The shape is perfect for little hands. Thanks Johnsonville!

Gluten Free Rotini with a Charred Green Onion Pesto, Toasted Cashews and Cranberries

We LOVED the pesto, I wish I'd made more. This was very good and I added grilled chicken to complete the meal. If you love green onions and cashews, make the pesto soon--you won't be sorry! The gluten free rotini was a nice change, and would be perfect to serve to friends who can't tolerate gluten.

Karen's Rolled Sugar Cookies

These worked great for me. It's important to chill the dough in a flat disc, and then when you're ready to roll and cut the cookies, allow it to rest at room temperature for about 5-10 minutes after removing from the fridge. This prevents the dough from being too crumbly while rolling. Using Reynold's parchment paper to roll them out meant no sticking, and almost no cleanup. I loved the taste, they aren't too sweet which means you can add icing and candy and not get a crazy sugar rush! My girls loved them too!

Tortellini Minestrone Soup

This is DELICIOUS! Restaurant-quality. I was afraid of the ketchup, but the red wine adds so much body to the flavor that it just works. My family devoured it, and I'll definitely make it again.

Avocado Cheesecake with Walnut Crust

If you like different and unique, this is for you! It tastes like gently sweetened avocados, and the texture is silky and smooth--the crust is wonderful. I baked it the night before serving, and in true avocado fashion the top browned a little, so if you want to preserve the color, bake the morning you plan on serving it. I served it with the Raspberry Sauce recipe from this site (just type Raspberry Sauce and it's the very first one), and it was great. My kids were hesitant to try it, but this would be neat served for a Cinco de Mayo dessert.

Avocado Banana and Walnut Muffins

I liked the fact that these aren't overly sweet, and the avocado essentially replaces oil or butter with healthier fats. They're perfect with a glass of orange juice or coffee. Very neat concept--I would make them again!

Chef John's Corned Beef Hash

The flavor is out of this world good, and I used baby red potatoes because I like to leave them unpeeled. The fire roasted salsa adds a delicious but subtle Southwestern flavor, and instead of poached egg I topped the hash with more salsa and some sour cream. I had trouble flipping the hash in pieces so I did the best I could and just cooked it until it was crisp in pieces. Delicious!!

Grandma Mottle's Blarney Stones

Yum, what a treat! This is such a cute idea for Saint Patrick's Day, and goes beyond green milk in the cereal for the kids. It's an easy and simple recipe, but its sweet and salty flavors will make everyone happy.

This is CRAZY! I love all the ingredients separately, and was pleasantly surprised at how much I LOVED this recipe. Avocados are a favorite, and it's normal to add tomatoes, lime juice, and green onions for a "normal" guacamole, but the capers gave it a nice salty bite and the tuna adds more! I don't know where you came up with the idea for this recipe, but it's one I could see myself noshing on with wheat crackers for a healthy and delicious lunch. YUM!

Addictive--if you love sweet and salty snacks, this is for you! I didn't use the full amount of chocolate because I didn't want it to be overly sweet (there's a fine line between snacks and treats!), and added about 9 ounces. My youngest girl helped me make it, and she couldn't stop eating it. My oldest will love her new after school snack, and using parchment paper makes clean-up easy.

Pork Carnitas with Cilantro Tomatillo Sauce

So easy and DELICIOUS! I made this recipe exactly as stated, and have a few tips. Be sure not to pour too much water in the pot during step 2--I may have used 1/3 cup at most. The timing worked perfectly for me. The liquid had evaporated enough after the 45 minutes to create well-coated but not soupy at all pork bites. I liked the salsa (it's not really a true sauce), and served the carnitas with warm corn tortillas and lime. They tasted very fresh because there aren't a lot of ingredients, and I appreciated that the salsa and pork could be made ahead of time, so all I had to do was warm the meat & tortillas, plate, and serve with a squirt of lime. I'll make these again!

Sweet and Spicy Salmon with Grapefruit Salsa

I really like this recipe! The rub adds a smoky, savory, and gently sweet crust to the salmon--a great way to add flavor to the fish. I opted to use red grapefruit in the salsa, made it a few hours in advance, and it's delicious. It was just sweet enough, and tasted very fresh. I felt healthy eating this recipe, and will definitely make it again. This would be fantastic over a bed of citrus-flavored vegetable quinoa. YUMMM!
