I'll be honest, creating recipes is something I daydream about in my mind, but it doesn't always turn out like my imagination hoped. There are a few recipes out there that are "jrbaker originals" but I am most comfortable relying on the tried and true (and 5 star reviews) of the recipes I've found here on allrecipes.com. Some have become fast family favorites (isn't this the best cooking website ever?).
For the Allstar Ambassadors of Allrecipes, this month provided the opportunity to cook with al fresco chicken sausage again. I am in love with this product. Not only are they all-natural, gluten-free, and delicious, but the varieties make it easy to incorporate them into any meal. The challenge was to create my own original recipe, and I chose al fresco's Smoky Andouille Chicken Sausage for the task. Here's what I came up with:
My family loved it! I like to call grits the "pasta of the South" and I know that sounds a little dramatic, but if you've never tried grits, what are you waiting for? They make the perfect backdrop for the spicy andouille and sauteed vegetables. And they're super-good.

Hi JB, I have never made grits. I would Love to try this!! The shrooms look amazing too!! Thanks soo much for sharing some Wonderful ideas with us! Love those sausages!! OH COSTCO, here I come! hee hee

I love grits! In fact, last night I made al fresco Roasted Pepper and Asiago Chicken Sausage Frittata (using another brand's chipotle sausage) and served it with grits and fruit. Delicious!

This one yankee that LOVES grits and LOVES your nickname for them. I plan on using it at client lunches and giving you full credit. Great pictures. I almost don't want to eat my food when I see pictures of yours but then I eat it anyway because I'm hungry. Have a great day.

My favorite things to cook
My absolute favorite recipes are clones from restaurants--it's so much fun to have people ask "did you really make this?" I also enjoy pastas, vegetable dishes, and creating lower fat, healthier recipes from those that aren't so healthy. Packing my two girls' lunchboxes every day is also a fun challenge--we like healthy and fun meals that focus on nutrition.
My favorite family cooking traditions
Every year for my husband's birthday, I bake his favorite cheesecake, and my daughters get their favorite birthday cake or cupcakes (it changes every year). We almost always have their parties at home. At Christmas, I love baking biscotti for gifts and myself; ).
My cooking triumphs
Each Christmas I host dinner for my family, and it's the one time during the year that I get to cook everything for them! I plan the menu for weeks-having a successful meal is the highlight of my year. Also, almost every New Year's Eve, I host a dinner for friends, and they get so excited about being invited--it's great to know that I can cook something they enjoy so much. Lastly, I have coworkers and a boss who LOVE to sample my latest creations! (They'll eat anything......)
My cooking tragedies
I can't make a good gravy. And I'm Southern! Also, I once froze bagged salad that was buy one get one free. I was only 20, and not very savvy about lettuce storage! I learned very quickly that you can't freeze lettuce.......
