Best Cream Of Broccoli Soup

Yummy! As a vegetarian, I used organic mushroom broth. I added one large potato when adding the broccoli. I didn't used just the florets, but the whole thing. Since I didn't have any celery, I added some celery seed. I also added a cup of shredded sharp cheddar cheese. Croutons are a must! Perfect for this snowy day!

Whole Wheat, Oatmeal, and Banana Pancakes

Yummy recipe! I would add another banana and/or maybe some other fruit (blueberries?) next time. I had some trouble with keeping the right temperature on the stove, but that was just my lack of experience in making pancakes. I made the whole batch, even though I was home alone. I froze the leftovers, and can now have a pancake whenever I want!

Baked Spaghetti Squash Lasagna Style

Oh, my! This is super duper yummy! I don't do canned tomatoes, so I used 3 fresh tomatoes (and would have used 4 if I'd had them. I also added about 1/2 of a green pepper which I cooked with the onion and garlic. I served this multi-grain garlic bread. I'll be making this one again soon...maybe even for special company!

Vegetarian Chickpea Sandwich Filling

I brought this to a group picnic, thinking that I would probably end up taking this home. The non-vegetarians ate it up and asked for the recipe! It was excellent! I used baby carrots instead of celery, but I add some celery seed. I also added flax seeds to get in my Omega-3. I will definitely make this again!

Fabulous Zucchini Grinders

Wow, yummy, yummy, wow! I added a bit of onion and yellow pepper, and I used havarti and parmesean cheese, as that's all I had on hand. When I discovered that I didn't have bread, I used a pita. I have some left over zucchini "stuffing", so I am already looking forward to eat this again tomorrow!

Kidney Bean Salad

This was SO easy and SO yummy! I used green pepper instead of celery, because I didn't have any celery. I am imagining this in a pita....maybe with some fresh spinach leaves and some tomato slices....yum!

Healthy eggplant chickpea veggie patty

This is yummy with lots of extra nutritional touches that no one will even notice. If you have trouble forming the patties, add a bit more grounded up oatmeal. Make smaller patties and serve them as an appetizer.

Spinach Balls

These are fantastic! I brought them to a party, and people loved them! I think I'll try subbing some of the bread crumbs with ground oatmeal, and using some olive oil in place of some of the butter.

Smoky Chipotle Hummus

This was delicious! I didn't have fresh cilantro so I used 2 frozen cilantro cubes from Trader Joe's. I also roasted my own peppers and left out tomatoes (because I didn't have any on hand). I will make this one again and again!

Baked Falafel

I made this tonight. I used dried garbanzo beans that I soaked and cooked first. Other than that, I followed the recipe. Sooooo yummy! I will make this again. I'm a vegetarian, but I'm sure carnivores would enjoy this too!

Barbeque Tempeh Sandwiches

This was SO easy, and so delicious!!!! I put coleslaw in my bun. I wanted to eat just one sandwich, but when I finished it, I had to have another. One of the best vegetarian recipes ever! I will make this again and again!

Avocado, Tomato and Mango Salsa

Flavor explosion! Wow! I tasted it right after making it, and thought that it could be too hot, but after chilling it overnight, it was perfect. I LOVE this salsa. It's going on a girls weekend trip and will go well with our margaritas!

Hot Corn Dip

It took me less than 10 minutes to throw this together, and I baked it for 35 minutes. I added 1 teaspoon of cumin and a heaping tablespoon of mayo (the kind with olive oil) to the recipe. I brought it to a cook-out, and I had one request for the recipe, and many comments on how yummy it is. I can see many variations...adding cheese, or bits of green onion, salsa instead of the tomatoes. I will definitely be making this recipe again.

Creamy Avocado Pesto - Delish!

This was excellent! I added about 1/4 cup of walnuts and a teaspoon or two of olive oil. I also used lime instead of lemon (as I didn't have a lemon) and kidney beans instead of chicken to keep it vegetarian. Yum! Will make again!

Vegetarian Lentil Spaghetti

Oh, so good! I sauteed some garlic and onion in the sauce pan before adding the tomatoes and lentils. I am guessing some green peppers would also be yummy. I doubled the amount of lentils, making a thicker "meatier" sauce. I also added some Italian seasoning when adding the sesame seeds. Parmesean cheese flakes on the top gave this a special touch. This is a recipe that's easy and could easily be varied depending what you like and what you have on hand.

Quinoa Black Bean Burgers

Most excellent. I didn't have green pepper, so I used left over corn. I also added some garbanzo beans from my fridge. I increased the garlic and spices, and added paprika and chili powder. Like other users, I baked these in the oven. (400 degrees 20 minutes on one side, flip, 15 minutes on the other side). The texture and flavor were great. I can see making different variations of this recipe.
