Slow Cooker Lasagna

Reduced salt to 1 t. Added 1 c. water. Used 16 oz. cottage cheese (i.e. the whole container. Used 6 oz. lasagna noodles (regular kind). Cooked for 1 Hr on High and 1 Hr 45 min on Low. Otherwise, followed recipe exactly (ha!). It was perfect. I think the important thing is to - as others have suggested - make sure the noodles are immersed in the meat sauce. They will cook up fine! I have a big oval Crock Pot.

Pico de Gallo

V. good recipe. I made a big batch, mixed up a couple of tablespoons of it with a ripe avocado and got great guacamole. It's like two side dishes in one!

Awesome Slow Cooker Pot Roast

The meat seemed a little mushy but I did cook for 8.5 hours on Low. I also added new red potatoes, baby carrots and celery. Served with Yorkshire Pudding (from the about.com British food site).

Baked Ziti I

Apparently, this was quite good. I put it together for a potluck and left it overnight in the refrigerator. Used rigatoni as I did not have any ziti on hand. Hubby was hoping for leftovers, but there were none!

Cuban Beans and Rice

I made this without the rice and it was a little on the tangy, tomato-y side. I used concentrated tomato paste so that may have been why.

Addictive Sweet Potato Burritos

Very good. Served with sour cream and salsa. Made a 1/2 batch from one large can yams, one reg. can of black beans and 1 c. of canned corn (drained). Yum!

Shrimp Fettuccine Alfredo

Tasted good, but the half-and-half curdled. Started with raw shrimp and I still think they were overcooked by the end. Next time, will keep them separate from the alfredo sauce. Served with linguine (instead of fettucine), French bread and a salad.

Spicy Black Bean Empanadas

Ashley's African Peanut Soup

Used six or seven chicken drumsticks instead of chicken breast, but other than that followed the recipe pretty closely. Wanted a gluten-free main dish so this served with jasmine rice fit the bill. Everyone enjoyed it! May add more peanut butter next time.

Cottage Cheese Chicken Enchiladas

Tasty! Made my own enchilada sauce from Campbell's tomato soup + spices + splenda + broth (def. more than 10 oz). People who don't regularly like cottage cheese ate these up! Used low fat cottage cheese and low fat sour cream. Sauteed bell peppers and onions with shredded rotisserie chicken breast. Otherwise followed recipe.

Fish Tacos

Thank you so much for this recipe. We pan-fried the cod in some olive oil. Served with corn tortillas, pico de gallo, cole slaw mix and guacamole. Delicious and a nice change for dinner!

Tofu Parmigiana

Followed the reviews and breaded with flour, egg and then the bread crumb mixture. Baked the tofu slices instead of frying. Doubled the sauce ... and we still could've had more sauce.

Slow Cooker Chicken Stroganoff

Tasty flavor! I followed the directions pretty closely except I added 1/2 can milk and a dollop of light sour cream + sauteed mushrooms and onions. The chicken ended up overcooked and dry -- 5 hours is too long. Next time I will try putting in everything at the beginning.

Penne Pasta with Spinach and Bacon

Easy peasy! Used slightly more bacon than the recipe called for, added in a chopped onion and used 16 oz of penne and a 28 oz can of diced tomatoes. Also sprinkled some basil in the sauce and mixed baby spinach right in. Served with French bread and parmesan cheese. Yum-o! Thanks for the recipe!
