Best-Ever Texas Caviar

Should be called "Crack" Texas Caviar...it is that good. Used granulated Splenda instead of sugar. Made 5 servings but kept the 10-serving amounts of bell peppers, onions, vinegar and chile peppers. Also threw in 1/2 can of garbanzo beans I had left over. Fantastic!

Crumb-Topped Rhubarb

This is very good even with Splenda instead of sugar and Splenda's brown sugar blend instead of brown sugar. Everything else I followed exactly. I thought the crumb to rhubarb ratio was too high, though, especially with the way the rhubarb cooks down. I think you can get away with using just 1/2 to 3/4 of the crumb topping. Served with vanilla ice cream. Yum!

Whole Wheat Ravioli with Sauteed Garlic Vegetables

Followed the recipe exactly using Farmer's Market veggies. Hubby said it was the best thing I have ever made. Granted, 90% of the work was the Buitoni ravioli :-).

Warm Dijon Potato Salad

Very very good. Followed recipe exactly except for the following. Used white vinegar as I had no cider vinegar. Also added diced crisp turkey bacon. Wonderful use for red potatoes. Hubby loved them!

Pico de Gallo

V. good recipe. I made a big batch, mixed up a couple of tablespoons of it with a ripe avocado and got great guacamole. It's like two side dishes in one!

Fish Tacos

Thank you so much for this recipe. We pan-fried the cod in some olive oil. Served with corn tortillas, pico de gallo, cole slaw mix and guacamole. Delicious and a nice change for dinner!

Homemade Black Bean Veggie Burgers

These were really good, but I gave only four stars because they were WAY too spicy. I think next time, I will use half the chili powder and hot sauce recommended. Made them, froze them and then cooked on our Griddler.

Cottage Cheese Chicken Enchiladas

Tasty! Made my own enchilada sauce from Campbell's tomato soup + spices + splenda + broth (def. more than 10 oz). People who don't regularly like cottage cheese ate these up! Used low fat cottage cheese and low fat sour cream. Sauteed bell peppers and onions with shredded rotisserie chicken breast. Otherwise followed recipe.

Men Love This Steak

Pretty good - I didn't add butter. Used onions instead of the vegetables in the recipe. Overcooked the meat a little bit since I did everything on the stovetop and kept the steaks warm in the oven when I cooked the onions. Served with scalloped potatoes and sauteed spinach. Nice dinner after a rough day.

Slow Cooker Chicken Taco Soup

Almost like a chicken chili. The best thing was I was able to substitute stuff I had (e.g. 28 oz can of crushed tomatoes + small can of mild green chiles for the 2 10 oz. cans of tomatoes + 8 oz. can of tomato sauce) for stuff in the recipe. Also used can of chicken broth instead of beer and pinto instead of chili beans. This was a HUGE hit.

Used craisins so did eliminated step with sugar and orange. Used Splenda brown sugar blend - otherwise followed recipe exactly. Looking forward to trying with other additions (e.g. chocolate chunks, raisins, etc).

Slow Cooker Lasagna

Reduced salt to 1 t. Added 1 c. water. Used 16 oz. cottage cheese (i.e. the whole container. Used 6 oz. lasagna noodles (regular kind). Cooked for 1 Hr on High and 1 Hr 45 min on Low. Otherwise, followed recipe exactly (ha!). It was perfect. I think the important thing is to - as others have suggested - make sure the noodles are immersed in the meat sauce. They will cook up fine! I have a big oval Crock Pot.

Ashley's African Peanut Soup

Used six or seven chicken drumsticks instead of chicken breast, but other than that followed the recipe pretty closely. Wanted a gluten-free main dish so this served with jasmine rice fit the bill. Everyone enjoyed it! May add more peanut butter next time.
