Chicken and Gnocchi Soup

Super easy. Put in 1 tsp of thyme with the veg. Subbed ff evaporated milk for the half-and-half. Did use the slurry. Added in a handful of grated parmesan and a Tblsp of seasoned salt to the final product. Yum!

Shannon's Smoky Macaroni and Cheese

Made about 2/3 of the recipe and it was good! ... don't think you need as much topping as the recipe calls for ... could use some more salt and if I didn't have kids, I'd add a little kick. Will seem like there's too much sauce, but thickens up nicely in the oven. Used ff evaporated milk as I had some to use up.

Sesame Noodles

This was OK ... I cut down on the oil and sugar and it ended up being a little too vinegar-y. Will play around with the ratios. I made with cubed chicken and frozen stir fry vegetables and I think it would've been much better with fresh.

Tofu Parmigiana

Followed the reviews and breaded with flour, egg and then the bread crumb mixture. Baked the tofu slices instead of frying. Doubled the sauce ... and we still could've had more sauce.

Simple White Cake

Was going to follow others' suggestions and use 2x the milk, but read the directions wrong and used the actual recipe amount. Cake ended up fine! Used a tad more vanilla than the recipe called for.

Lentils and Rice with Fried Onions (Mujadarrah)

Added 1 tsp of cumin to the lentils and rice. Also used half water and half chicken stock. Added a pinch of cinnamon to the onions. Really need MORE onions (3 or 4). Yogurt is KEY.

Took longer than the stated time to bake, but that may have been because we made smaller cookies that did not have the spacing the recipe suggested. Covered with some icing and red sugar and still weren't too sweet.

Black-Eyed Pea Chowder

Yummy meal for a cold winter night. Added extra can of black-eyed peas and used one 14.5 oz can of diced tomatoes and one 14.5 oz can of stewed tomatoes. Served with corn bread.

Easy Pizza Sauce III

Pretty good ... read reviews and added some basil, sugar and onion powder. Used minced garlic (not dried) and 24 oz of tomato sauce with 6 oz tomato paste. Consistency was fine.

Pesto Chicken Florentine

Yummy! I don't think hubby was a huge fan, but I thought it was delicious. It's true -- you can pretty much use any vegetables (I used frozen spinach, mushrooms, onion, some sun-dried tomatoes), any protein (I used chicken). I used a jar of Light Alfredo and a couple of spoonfuls of jarred pesto.

Shrimp Fettuccine Alfredo

Tasted good, but the half-and-half curdled. Started with raw shrimp and I still think they were overcooked by the end. Next time, will keep them separate from the alfredo sauce. Served with linguine (instead of fettucine), French bread and a salad.

The Best Chicken Fried Steak

My first time deep frying! Easier than I expected though I wish it wasn't so darn caloric! Followed the recipe exactly except used canola oil for frying. Served with mashed potatoes, corn and Hawaiian sweet rolls.

Braised Pork Ragu

Like many reviewers suggested, I let it cook twice as long as the recipe states to get more of a ragu-like consistency. I also left out the rosemary as I didn't have any on hand. Otherwise, I followed the receipe.

Roast Pork with Maple and Mustard Glaze

Made in the crock pot (4 hours on high), but the sauce seemed very watery. I also added two cut up onions and some baby carrots which may have contributed liquid. Pork also seemed a bit dry but maybe that was the cut I used. May try a shoulder or butt next time. Will also try in the oven as I'd like a crisper outside!
