Cooking for family, I followed the advice of others and did not add the hot pepper sauce. While making the loaf, I noticed that the Worcestershire had chili paste in it which was fine for the loaf but I thought was too spicy for the topping-paste; decided to toss that topping mixture and instead made a paste of equal parts ketchup and brown sugar.
Made this ahead on Thursday evening and served for dinner on Saturday. I put the meat in a bread loaf pan and sealed with saran wrap (pressed right on top of loaf and then up sides of pan so no air was in there.) Kept the top-paste separate in a pyrex dish to add right before baking. Stored in fridge.
Everyone ate it! Two picky boys 4+7, husband who usually can't stand meatloaf, my mom who doesn't eat read meat, my very health-conscious dad, and me. Served with grilled, seasoned, sliced potatoes and peas. Grown-ups all had more than one piece, and there were a few leftovers which were tasty too. Will make this again! Husband said I should triple the ketchup-brown sugar topping next time.
