Turkey and Quinoa Meatloaf

Reviewed: Apr. 13, 2011
Cooking for family, I followed the advice of others and did not add the hot pepper sauce. While making the loaf, I noticed that the Worcestershire had chili paste in it which was fine for the loaf but I thought was too spicy for the topping-paste; decided to toss that topping mixture and instead made a paste of equal parts ketchup and brown sugar. Made this ahead on Thursday evening and served for dinner on Saturday. I put the meat in a bread loaf pan and sealed with saran wrap (pressed right on top of loaf and then up sides of pan so no air was in there.) Kept the top-paste separate in a pyrex dish to add right before baking. Stored in fridge. Everyone ate it! Two picky boys 4+7, husband who usually can't stand meatloaf, my mom who doesn't eat read meat, my very health-conscious dad, and me. Served with grilled, seasoned, sliced potatoes and peas. Grown-ups all had more than one piece, and there were a few leftovers which were tasty too. Will make this again! Husband said I should triple the ketchup-brown sugar topping next time. 4 stars due to the alterations, 5 stars for the idea/inspiration!

Spiced Pecans

Reviewed: Jan. 13, 2010
Wow, these are awesome! I followed the other reviewers' advice: 300 degree oven, added a bit of cayenne pepper, went light on the cloves since my husband dislikes that spice... couldn't get over how good they were; just what I had in mind. yummy!

Egg Salad Sandwiches

Reviewed: Apr. 13, 2009
Liked the little kick of the mustard powder but, even with some chopped celery added, this was a little bland for my taste. Maybe will add some chopped sweet pickles or hot pepper flakes next time. Good way to use up all the Easter eggs though!

Jennifer's Granola

Reviewed: Apr. 11, 2009
I've already made this recipe twice - loving it. I only had quick oats on hand and it's fine. No sunflower seeds on hand so just added more of the other nuts. One tsp of salt was plenty. Used a pyrex glass casserole dish and it was fine after baking for an hour (some other reviewers commented that an hour was too long). Not super crunchy but just enough "chew". I plan on making it for my dad for his birthday.

Spicy Roasted Edamame

Reviewed: Apr. 2, 2009
This was a good side dish but still couldn't get my husband and three boys to eat much of it. Hubby thought it was a little "oily". I had it the next day over penne and that was a good meal too.

Health Nut Blueberry Muffins

Reviewed: Mar. 22, 2009
No oat bran or wheat germ on hand, doubled quick oats. No buttermilk on hand, poured 1 Tbl vinegar into liquid measuring cup and added milk up to 1 Cup (let stand 5 minutes). Only had 1/2 cup frozen blueberries, so used 3 very ripe, small bananas (hence the search for this recipe). Very moist and delicious! My two year old loved it. Will try with the oat bran and wheat germ next time.
