Cajun Cake

Reviewed: Feb. 4, 2009
Good night Irene, but this cake is AWESOME!! I made it just as the recipe called for with only 3 minor alterations. 1) I didn't use a mixer (just a hand whisk is all it took). 2) since I didn't have much white sugar in the house, I used all brown sugar on the topping and it turned out GREAT!! and 3) I added about 1/2 cup more pecans. The other reviewers weren't joking when they said that this gets better the next day. Day 1--it was great Day 2--it was greater and by Day 3, it was the GREATEST and then ALL GONE :)

Basic Pasta

Reviewed: Jan. 11, 2009
VERY good and VERY easy to make! This was my 1st attempt at making pasta and was surprised to see how easy it was...kinda had me thinking that it wouldnt be that good, BUT boy, was I WRONG!! I doubled the recipe and used another poster's advice and used 1 TBS olive oil. The dough was very easy to work with. I will be making this many times more, I am sure!! Thanks for the great recipe! :)

I am a novice at making baklava, but with this recipe you would never be able to tell! It is absolutly delicious (and this is even an understatement!!) We did as another person suggested and cut it to within a half an inch from the bottom to allow the syrup to be absorbed in the upper layers instead of sinking to the bottom, then cut all the way through after it had cooled completely. We also brushed the butter very lightly between EACH sheet of the phyllo dough. Other than those 2 things, we followed the recipe to a "T". Thank you for the great recipe!!

Ham Salad Spread

Reviewed: Jan. 2, 2009
Very good recipe! My husband made this using the food processor to do all of the chopping--first doing the ham--and then doing the celery, onion and egg together. We used this on toasted homemade rye bread with a little lettuce and it made awesome sandwiches!! Thanks for posting this recipe as it be a regular in our home!

Lemon Sugar Tea Cookies

Reviewed: Dec. 22, 2008
Thank you so much for sharing your wonderful recipe! I doubled it even though this was my first time making these, and they turned out fabulous! So quick and easy to make too. The texture is soft in the middle and crunchy around the edges....just perfect. This will no doubt be a recipe that I will turn to often, as the cookies don't seem to last long at all!! :)

Carrot Banana Bread

Reviewed: Dec. 11, 2008
Oh my, this is a perfect recipe if you are looking to use up your ripe bananas. I absolutely love the texture of this bread and the flavor to boot! We made this just as the recipe called for and it turned out great!! The top is my favorite part because it is crusty and firm, but not hard or tough....sooo YUMMY!! We have tried a couple of other recipes for banana bread but honestly, none compare to this one! This will be a regular in our home. Thank you very much for sharing your wonderful recipe!

D' Best Chicken N' Dumplings

Reviewed: Dec. 3, 2008
THANK YOU, THANK YOU, THANK YOU so much for this wonderful recipe! This reminds me a lot of the one that my mom use to make. I did wind up using all of the dumpling dough and boy am I glad that I did because they are simply DELICIOUS! Because I started with a whole chicken I used all of the "scraps" to make a broth for later use, which was easy to do since I was already chopping some onion and celery for the recipe. Also, after the chicken had finished simmering, I deboned it saving the cartilage and fat for our 3 dogs! So you have made EVERYONE in my house extremely happy with sharing your recipe! Thanks again!! :)

Reviewed: Nov. 13, 2008
This recipe is SOOOO good! I have made it twice, both times with a couple of alterations. I used one stick of unsalted butter for 1/2 cup of the oil and substituted 1 cup of brown sugar for 1 cup of the white sugar. What more can I say..... All of the reviews were dead on!! Thank you very much for the great recipe which will surly be passed down. :)
