Baja Salad

Excellent! I took this to a dinner party and it was a hit. I followed the recipe with the addition of cilantro. It took a little longer to prepare then I expected due to vegetable chopping, but it was worth it.

Pizza Casserole

Made it twice. Kids loved it. It's like a combination pizza in a casserole pan. I followed advice of others and used 1/2 beef 1/2 Italian sausage and I added olives. I used whatever pasta I had on hand. In fact after making it the first time, I had 1/2 lb each of beef, sausage, and mozzarella left over, so I tossed it all in the freezer with a note to myself and a copy of the recipe for a "no-brainer" dinner a couple weeks later.

Easy Slow Cooker French Dip

Super easy and tasty recipe. We have a lot of venison and elk roast/steaks to use and the crockpot is a necessity for a busy family. I simply used a couple packages of game to get to 4lbs and followed the recipe with one substitution (I didn't have cream of onion so I used Lipton Onion Soup Mix with an appropriate addition of liquid). Oh, and we're a horseradish loving family, so we served that at the table as well.

Best Brownies

Great recipe using cocoa! I didn't have enough cocoa for the frosting, so just sprinkled powder sugar and they were wonderful! Doubled and made 9x13

Too Much Chocolate Cake

Needed to make dessert for special dinner. Didn't have time for a "refrigerate for 4 hours" or "the night before" type of recipe. Followed recipe exactly. Dusted with powdered sugar. Served slices with homemade whipped cream, a spring of mint, and a few raspberries. It tasted great and presented beautifully.

Gyros Burgers

We love this recipe (family of 5, including 8, 10, and 12 yr old). I substitute equal parts thyme/marjoram/sage for the savory and equal parts cinnamon/nutmeg for the allspice. I've also made it three ways, as burgers, as meatloaf (sliced), and "taco style". I think our favorite is taco style (stove top browned), because then we just spoon it into pitas. However, meatloaf style allows me to set my oven timer and walk away. We serve it on pitas with a gyro sauce, tomatoes, and lettuce. Feta too if I remember it.

Asian Salmon

Did as others suggested and doubled the sauce, added a little ginger too. I also thickened the sauce (after baking) with some cornstarch. Everybody had seconds or more! Kids, 7, 9, and 11.

Taco Soup V

My kids picked out this recipe. I told them I had ground beef, onions, and tomatoes on hand, and this was the recipe they picked. They cooked it on their own. They are 11, 9, & 7 years old. They loved it. I may have had better soups, but this is a keeper!

Asian Beef with Snow Peas

Awesome! All 5 of us loved it, and the youngest is only 7 yrs old. Marinated steak in the sauce all day, then pulled it out and sliced it, added the cornstarch to the marinade, and proceeded to prepare the meal as instructed. We also added broccoli and bell pepper from the garden.

Braised Lamb Kahlua

This was awesome! Easy to prepare and I had all the ingredients on hand which is always a bonus. I skipped the browning step (and therefore the flour). Tossed everything but the mushrooms in a slow cooker and cooked it all afternoon. I added the mushrooms the last half hour. Kids (5, 7, 9) and husband loved it. Will absolutely make it again.

Overnight Berry Coffee Cake

Very good, Very easy. I added just a little more topping by rounding up the topping ingredients. My kids devoured it in the morning, and all I had to do was pour a glass of milk. I loved that it was make the night before, I actually served this on a school day.
