Great Nana's Secret Ingredient Date Nut Bread

Reviewed: Nov. 13, 2008
This is a DELICIOUS recipe. I really enjoyed the coffee flavor in the background! I substituted pecans (just don't care for walnuts) and next time I would add just about 1/4-1/2 cup extra flour, as the center of the loaf collapsed while cooking. I also let my date chunks sit in the coffee for about 15 minutes & in that time, they pretty much dissolved - which made a very smooth batter. Flavor is superb. Very easy to make. Thanks for posting it!

Hot Cocoa Mix

My confectioners sugar doesn't dissolve well in this. My first batch was too watery & not nearly chocolate enough. So for the next batch I used half the milk & kept all the other proportions the same. The creamer and milk together make a nice thick texture when the proportions are right.

Apple Crisp III

GREAT recipe! I used 1/4 c. sugar & 1/4 c. butter, kept the flour the same - this was plenty sweet for me & made a delicious crispy crumble for the top. Very easy to make too, I highly recommend it.

Easy Morning Glory Muffins

Reviewed: Jan. 7, 2009
LOVED this recipe! I would recommend, after shredding the carrots - cooking them for a couple of minutes in the microwave, just to make them less crunchy. I also ran my apples, carrots, and raisins through the food processor to make them extra fine & release the flavor more. I've been cutting back on sugar, so I changed a few things in this recipe. I used 2 bananas in place of the sugar, 1 c. applesauce in place of the oil. These substitutions make the finished muffin very moist. Very tasty recipe though. Thanks for sharing it!
