Bagels II

These are absolutely delicious! I've made this recipe twice, the first time exactly as the recipe stated and the second time with a few changes. I used 3 tablespoons sugar in the dough instead of 2. I also found with the first batch that the bagels stuck badly to the pan and tore when trying to turn them, so for the second batch, I dipped the bottoms in cornmeal before I placed them on the oiled baking sheet, then did not turn them. They turned out beautifully. These bagels are so much better than bakery bought bagels. They are dense, chewy and flavorful!! Love them!

Best Carrot Cake Ever

This was wonderful the first time I made it! It was light, moist, and delicious! I finely shredded my carrots, then let them sit in the brown sugar. I squeezed out all of the excess juice before adding it to the mixture. I also squeezed all of the juice out of the pineapple before adding it. I also increased the baking soda to 2 teaspoons, instead of 1 1/2. I decreased the cinnamon from 4 teaspoons to 2 teaspoons. The total bake time was exactly 40 minutes in my gas oven. I checked it at 35 minutes, because it was a very golden brown, but it wasn't quite done, but at 40 minutes it was perfect. I used a cream cheese frosting, 1 8 oz. package of cream cheese, 1/4 cup of margarine, 1 teaspoon of vanilla and 4 cups of powdered sugar, to frost the cake. I doubled this recipe and had more than enough. I would suggest this cake to anyone! It was wonderful!!

Grandmother's Buttermilk Cornbread

This was absolutely the most fabulous cornbread I've ever had, whether from a home chef or restaurant! It was moist, sweet, delicious, and had a fabulous texture and crumb. I doubled the servings, then followed the recipe exactly. I did not add or omit any ingredients, and I used buttermilk, as the recipe states. I baked the cornbread in a large glass casserole baking dish for exactly 30 minutes. It was perfectly baked and had a wonderfully golden crust on the bottom. If you want the best in the world cornbread, use this recipe. You'll get raves as I did. Thank you so much for this awesome cornbread, Bethany.

Boiled Bagels

Delicious! These are light, great tasting, and easy to make. I followed the recipe exactly. The bagels did stick to the pan badly, even though it was well greased, so the next time I will dip each bagel in cornmeal before I place them on the baking sheet.
