Chicken Vegetable Barley Soup

Reviewed: Jan. 30, 2011
I didn't have mushrooms or barley, so I substituted small noodles. Everything else I followed exactly, and it was delicious! The toasted almonds seemed strange, but they were fantastic.

Spaghetti Squash I

Reviewed: Jan. 6, 2011
Outstanding. I had to cook the squash about 20 minutes longer because the noodles were too crunchy, and they came out perfect after about 50 minutes in the oven. I also used a large can of diced tomatoes in the juice instead of fresh tomatoes, and I used gorgonzola instead of feta because I love it. Otherwise, it was all the same and it was absolutely fantastic! My husband loved it, but our 2 young kids did not.

Savory Slow-Cooked Chicken Cacciatore

Reviewed: Dec. 21, 2010
This was excellent. I had some misgivings when I put it in the crockpot this morning because it didn't seem like it had enough liquid to cover the chicken, so I actually added just 3 chicken thighs, about half of what the recipe called for. I used 1/2 C chicken broth, 1/2C white wine. I only used 1 onion. When I served it, it was very liquidy and I realized too late I had forgotten the cornstarch mixture, which I think must be essential. I also didn't brown the chicken, and I put it in the crockpot frozen. I cooked on low for 10 hours until I got home from work.

Slow Cooker Beef Stroganoff I

Reviewed: Dec. 20, 2010
I made this for my parents and husband and they all raved about it. I used 2 lbs cubed stew meat, 2 cans golden mushroom soup, 1 chopped onion, 2 Tbsp Worcestershire sauce, 1/2 cup chicken broth, 1 bouillon cube, part of a package of onion soup mix, and 1lb sliced mushrooms. After cooking on low all day, I added a little over 4oz sour cream just before serving. I served over egg noodles and it made about 6-8 servings. Wonderful!

Rich Chocolate Frosting

Reviewed: Dec. 19, 2010
This frosting was excellent. I halved the recipe and frosted 24 cupcakes heavily! I think this frosting is best on a chocolate cupcake, because the frosting is so chocolatey that it overpowers the flavor of the cake. I used it on yellow cake, and I ended up scraping off most of the frosting so I could taste the actual cake. Still, the frosting itself is wonderful.

David's Yellow Cake

Reviewed: Dec. 19, 2010
This cake is unreal. I've never had batter that tasted so good, and the cake itself didn't even need any frosting! I still frosted it, but I scraped mine off because I felt like the frosting overpowered the taste of the cake. I made 24 cupcakes and cooked them for 20 minutes at 350.

Holiday Brie en Croute

Reviewed: Dec. 19, 2010
I made this recipe exactly as stated, and everyone at the holiday party raved about it! I'll definitely make it again Christmas Day. (oh, I did soak my cranberries in Cointreau instead of water, but I doubt that makes much of a difference.)

Chocolate Wafer Crust

Reviewed: Dec. 15, 2010
I used 25 oreos, and I put them in the food processor to make them almost as fine as dust! I used 6 Tbsp butter, and cooked the crust at 375 for 10 minutes. (my pie is a no-bake pie, so I had to cook the crust first).

Chicken Marsala

Reviewed: Sep. 8, 2010
I made this recipe exactly as the recipe states, even though I was tempted to make adjustments as others recommended. After eating it tonight, I would suggest cutting back on the oil/butter. It stays in the sauce and I could taste the extra fat. I would also double the mushrooms and perhaps add a dash more of the sherry and marsala, just to make more juice (which I could never have enough of!). I used Golden Sherry and quality marsala wine.

World's Best Lasagna

Reviewed: May 17, 2010
This was phenomenal. I used exact ingredients, however I did soak my noodles in hot tap water to soften and refrigerated it overnight. I'll be making the sauce for spaghetti this week as well! Next time I'll double the sauce to save time.

Hot Cocoa Mix in a Jar

Reviewed: Apr. 28, 2010
I was unimpressed. For the effort (so many ingredients!) I expected something much richer, chocolatier, and sweeter.

Barbie's Tuna Salad

Reviewed: Apr. 23, 2010
I tried to follow this recipe exactly, but I didn't have mayonnaise so I used Ranch Dressing instead. I also used 1/4 teaspoon in place of 1/8 teaspoon because I don't believe in 1/8 teaspoon of anything! It was fantastic. I was a little afraid of the curry, but the dill ended up being the most noticable flavor, and it is excellent.

Manicotti II

Reviewed: Jan. 18, 2010
I've made this recipe more times than I can count, and I'm finally getting around to reviewing it! I always make some type of adjustment to the recipes I use, however this is one I haven't tampered with at all. It is excellent AS IS! I've served this countless times for dinner parties, friends, and for family. Its always a huge success. The recipe makes more than 6 servings, though, so I always freeze the extra mix for later use.

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Jan. 8, 2010
I've read other people's critical reviews on the blandness of the recipe. Most of them mention that they add the "sundried tomatoes". The key is to use PESTO. Not just sundried tomatoes. Sun-dried tomato pesto is extrememly flavorful. I usually use the whole jar, which is about 2 oz. more than the recipe calls for. It has a LOT of flavor if you use the correct ingredients.

Phenomenal. My favorite stuffed mushroom recipe so far! I add bread crumbs to my stuffing just until thick and I top with mozzarella cheese.

Broiled Tilapia Parmesan

Reviewed: Jan. 4, 2010
I added 1/4 teaspoon paprika, some garlic powder and about 1/3 cup bread crumbs to my mixture. My fillets were thin, so there was no need to flip them. I broiled for about 2 minutes, then topped with my mixture and broiled until it was just browned. With my additions, our family loved it and we'll definitely make this easy and FAST recipe again!
