Chocolate Chip Pumpkin Bread
Love this!! Instead of using a full cup of oil, I only use 1/2 cup of oil plus 1/2 cup of applesauce. You honestly cannot tell the difference, as I have made it both ways. I like how it makes 3 breads--I often wrap them with ribbon and give them as gifts. (you can freeze them and have them ready as a hostess gift) I also use regular-sized chocolate chips. I think the small ones get lost in the bread a bit. I like the chunkier bites of chocolate.

Chewy Chocolate Chip Oatmeal Cookies
I am always on a quest for the perfect chocolate chip cookie. I may have found it! I subbed Butter-flavored Crisco + 6 tsp. water for the butter, and I used dark brown sugar instead of light. I upped the flour to 1 1/2 cups, reduced the salt to 1/2 tsp, and omitted the walnuts. Also added some extra chocolate chips. YUM!!!! Absurdly good. My family went crazy for them!

Chocolate Chip Banana Bread II
I have tried this with shortening and with butter. (omitted the walnuts both times). I preferred the butter option and so did my family. Perhaps butter-flavored Crisco would be good, but I used regular Crisco, and I really missed the taste of butter in it. Also, the Crisco gave the top a bit of a crisp to it, which I didn't care for as much. Absolutely LOVED the recipe when substituting butter, though!!!!
