Quinoa and Black Beans

Pumpkin Whoopie Pies

Great flavors and so moist! I used a filling that is similar to the one for the Giant Ding Dong cake on allrecipes except I used all butter (no shortening) and added maple extract rather than vanilla. This provides a really fluffy and not too sweet addition to the cake-like cookies. This filling is commonly used for a Red Velvet Cake icing as well. I also "dried" the cookies on racks over night to keep them from sticking to each other or the container. Then filled them, placed wax paper between them, and refrigerated the container before taking to work the next day. Yummy!

Special Turkey Gravy

Very easy and delish! I only used 3 cups of broth as I like my gravy more creamy... next time I'll add more flour to the drippings so I can add more broth to increase the overall amount.

Peanut Butter and Banana Dog Biscuits

Very easy and the dogs love them! I didn't have any challenges rolling the dough out. I then took a pizza cutter to cut the cookies into 1" squares -- very quick! I like to give my dogs crunchier treats so next time I'll either roll them thinner or bake them a little longer.

Monkey Bread II

You saved our Christmas! My mother was making Monkey Bread as a tradition but forgot to pick up the packaged dough. I couldn't find a store open late on Christmas Eve so I looked for a way to make it from scratch. Our family already loved the version using packaged dough, but this recipe kicked it up a notch and they all loved it! I made a couple of adjustments to make it *easier.* Made the dough by hand (no bread machine) and it was easy to work with it. Let rest for about 50-60 minutes until doubled. Punched down and rolled out the dough and cut it into 1" pieces with a pizza cutter. Melted the butter by itself. Placed the brown sugar and 1 c. nuts (omitted raisins) into a shallow bowl. Dunked the dough pieces into the butter and then moved to the sugar mixture; rolled til coated and then placed into the angel food pan. Poured the remaining sugar/nuts into the butter and then poured over the top of dough. Let rest another 20 minutes. Baked for 30 minutes. Gone before I knew it!

Chef John's Buttermilk Biscuits

The taste was great! However, they weren't browning on top even after I brushed them with melted butter at 13 minutes. They also didn't rise as much as expected. I ended up baking them for close to 20 minutes. They we're just slightly browning on top, but found the bottoms were extra crispy (not burnt, but heading that direction). I placed them on a silicone mat on a cookie sheet. I'll move my rack closer to middle of the oven next time to see if that helps balance the heating. Once again, the taste was great and the prep so simple... will keep working at it!

Meatloaf...a Little Southwest Style

Great flavor! Used a 20 oz. package of ground turkey, 1 egg, and just 2 Tbs of the BBQ sauce and a splash of spicy mustard. Cooked for 1 hour and 15 minutes until the internal temp reached 165. Added shredded cheese on top and placed under the broiler for the last few minutes. Held together just fine! Served with rice and steamed veggies.

Classic Dinner Rolls

Too easy to believe! And just as TASTY! Made for my family on Easter and they were a huge hit. To make 12 rolls fit in a 9x13 pan (larger size than recipe), you'll need 1/3 more of the ingredients. For those not familiar with RapidRise yeast, it is different than "Active Yeast." Follow the recipe exactly when using RapidRise OR adjust your processes and timing to use "Active Yeast" (which will take longer). BUT you're not sacrificing taste using the RapidRise version.

Grain and Nut Whole Wheat Pancakes

Great flavor... so much better than a box mix and easy to make. I halved all ingredients except the egg; this made 10 4" pancakes. Plenty for me and my husband. I use pecans rather than walnuts in pancakes, and I added 1/2 Tbsp of ground flax seed for health benefits. Keeper!

Cheesecake Lemon Bars

OMG!! This was so easy and delicious. I only had one lemon on hand which yielded 1/4 c. juice. I had frozen lemonade concentrate... used a little less than 1/4 c. and added enough water to make the 1/4 c. -- maybe 1-2 Tbs. I cut back on the sugar a bit because of the sugar in the concentrate. Great flavor!! I also used another reviewer's suggestion and placed a sour cream topping on top to make it a little prettier for our reunion (2 c. sour cream, 1/3 c. sugar, 1 tsp. vanilla) -- worked great! Lovely recipe -- thank you!!
