Brownie Mix-Black Bean Brownies

Very good! As a personal preference, I mixed all my chips into the batter. Almost tastes like there's pudding in the mix.

Strawberry Lemonade Ice Pops

Easy and delicious! I had pink lemonade and frozen whole strawberries in the freezer. I made 6 pops with the one mold I have...called friends and added some rum to the remainder because it's March and it's in the 80's in Florida!

Spicy Strawberry Kiwi Peach Salsa

Easy, refreshing and delish! As a personal preference I left out onions and cilantro...I know a true salsa has the onions, but my family prefers it without. Also, had nectarines so used them instead of the peach...no peeling required! The jalapeno had just the right amount of heat contrast to the fruit. Served with tortilla chips.

Mardi Gras King Cake

It's Mardi Gras today and this King Cake was a big hit. First time for me...I'm a New Englander!! No raisins, 1 1/2 times the filling and twice the glaze. It's a keeper! Thanks Laur5270 for the great tips!

N'Awlins Stuffed Bell Peppers

Good change from the traditional! I always steam my peppers first; used Andouille instead of ham and added beef broth to prepare the stuffing before combining with remaining ingredients. Also ended up using more creole seasoning as a personal preference.

Absolutely delicious! Took advice from BenzGal and used 3 oz. chocolate. Your may think at first that it could be grainy but just keep beating...smooth and decadent!

Chicken Tortilla Soup in the Slow Cooker

Delicious! The refried beans made it perfectly thick. Used mild salsa and served with sour cream and shredded cheddar for a wonderful meal!

Candied Almonds

To anyone looking for the almonds they serve in Disney World...these are as close as you will ever get. I did as another recommended and put them in the oven for about 8 minutes after I finished them on the stove. Great!

Mary's Salted Caramel-Pecan Bars

Made these for an ornament party. Big hit!! As suggested, I doubled the pecans. Next time I will chop them a little smaller...I think that will help in the spreading of the mixture. So Good!

Inca Red Quinoa Salad with Sweet Apple Chicken Sausage

I normally don't review when I've really changed a recipe...it's not fair to the original...so this review is for the vinaigrette. It's delicious!! I did add 2 T Dijon as well. For the rest of the recipe, I was cleaning out the frig so I used a rotissiere chicken, celery, orange sections and zest, and a peeled, chopped pear along with the red quinoa...all made wonderful because of the vinaigrette!

Baked Pumpkin Custard from EAGLE BRAND®

Very good and very easy, but not quite pumpkin pie for me, which I didn't expect it to be but also not a custard. I suppose I discovered from this that I'm a purist on both counts.
