Tasty Tuna Burgers

Not bad - what a surprise. I mixed the tuna with chopped onion, pepper and mushroom, added 2 TBSP each of cream/celery and cream/mushroom soup. I forgot to add the egg, but I didn't miss it. Pinches of salt, pepper, garlic - no muss no fuss. I didn't use alot of bread crumbs-didn't want them grainy. But yeah, flipping them was a problem-I may broil or Foreman Grill them next time instead. A slice of swiss over the tomato, some chips on the side and you've got yourself a party! I'll DEFINITELY try these again, perhaps with salmon too!!

Holiday Chicken Salad

FRICKIN amazing! I made this once two weeks ago, and gave tastes of it to three relatives. 30 mins later, the ENTIRE container was empty!! For me, the only headache is chopping up everything, but now I make enough for 3 bowlsful, and then separate into baggies and freeze. When ready to use leave it sit until the items are softer, then add your mayo/lemon/miracle whip combo to taste. I serve on cucumber and tomato/lettuce wraps. DELICIOUS!!

Angel Chicken Pasta

This was a huge hit with my family. Everyone LOVED it. As for me, I thought the mix of flavors was definitely...different. Not bad, but just different. I liked it though, and will absolutely make it again.

Golden Rum Cake

As I sit here typing, I am currently baking another cake! I made the first one two days ago -using pineapple cake mix and Bacardi dark rum. It was yummy! I split the mix into two 6" pans and made one without nuts. I didn't have walnuts so I used crushed peanuts - not the best idea. I used the recommended glazing method for the nut cake and just brushed the glaze onto the one without. At first the rum taste was so strong on the "dipped" one, that I had to go lie down after constantly tasting the glaze as I poured. But by the next morning the rum flavor had fused with the cakes and they were both delicious. My family couldn't stop snacking on them these past two days and they are now all gone! I am doing it again right now, but only I used chocolate cake and WALNUTS! It smells divine, and I can't wait to get at it! Great recipe!

Herald's Impossibly Easy Cheeseburger Pie

I first saw this recipe about 3 years ago and made it for my 6 year old as something quick and different. Fast forward to now and not only does my (now) 9 year old love it, but my husband does too! A breeze to make and nutritious!

Pineapple Upside-Down Cake VII

Make this for Thanksgiving in a 10" cast iron pan. I used Pineapple Supreme cake mix and it turned out DELISH!!! So moist - a lot of compliments were given and it went fast! Will DEFINITELY make this again and again!

Stuffed Green Peppers I

I was a little nervous about venturing out on something so different - but to tell you the truth, these were a breeze to make and really delicious. I only could find 4 decent medium sized peppers so I halved them and stuffed them beyond all get out, giving me 8 fat peppers. I only used 1 can of soup, which was more than enough. I also mixed in 1/2 a small can of Redpack "Hot n Spicy" tomato sauce which added the perfect amount of heat! I will DEFINTELY make these again without a doubt!!!

Caramel Apple Pork Chops

I made this the other night for my husband and son. I tried to double the sauce recipe like everyone suggested and wound up using WAY too much brown sugar! I did carmelize the onions in the butter though and added a touch of lemon to cut the sweet, and I left the skins on the apples to add a little more color. I served them with garlic mashed potatoes and green beans. As it turned out, all turned out pretty good, considering. My family loved them, which proves that it's kinda hard to screw this one up. Try it - you won't be sorry!
