Grandma's Eggless, Butterless, Milkless Cake

My first attempt at making vegan cake and it was fairly easy. My friend makes this cake all the time with a few changes and of course I had to follow… Added ¼ teaspoon of salt and used 1 cup of cocoa. Served with balsamic strawberries from this site.

Kung Pao Chicken

I am in love with this dish. I made this for about 10 people (served with white rice) and got rave reviews, truly amazing dish. I had some picky eaters and they loved it. I used Mirin instead of wine, used rice vinegar and added bamboo shoots along with chopped chestnuts. Like most, I did double the marinate & sauce but left out cornstarch in the marinate. So good…

Vegetable Lo Mein

Thanks for sharing this recipe. I doubled the recipe for Easter dinner. I followed most reviewers & omitted the honey. I prepared the veggies and sauce the day before. I reheated the sauce while I cooked the pasta (right before serving). Added coarsely chopped bok choy to heated sauce to retain crunch. Everyone liked this dish and I would certainly make again.

Mushroom Lentil Barley Stew

The easiest slow cooker recipe every made (twice). I didn't have summer savory, used oregano & thyme. The second time I made this stew I used frozen cropped spinach, added it within the last 2 hours of cooking time. 4 hours on high will cook barley perfectly. Perfect for my vegan mom.

Chicken Lo Mein

I read through the reviews and cut sugar (by 3 teaspoons), water and added 2 tablespoons of Oyster sauce. I marinated chicken overnight. Added asparagus, chopped carrots & broccoli. Recipe still needed help, it was fine but needed more flavor (salt, pepper and sriracha helped).

Slow Cooker London Broil

We really liked this recipe. I used london broil and seasoned it with garlic, salt and pepper. I didn’t use the onion soup mix (many felt it was too salty). I used low sodium cream of mushroom and tomato condensed soups. I added chopped onion and baby carrots to the soup mix and poured over beef. Cooked for 7 hours LOW and it fell apart. Served over egg noodles. So easy and would make again.

Easy Slow Cooker Meatballs

I’ve given this recipe a high rating because it’s a great concept. I never thought to do this and love to use the slow cooker. I’ve been dieting for several months and I try to “slim down” my favorite foods. I used 1 LB of ground chicken breast (320 cal), ½ lb ground chicken (340 cal. for some fat), 1 cup caramelized onions & garlic (67 cal), ½ cup bread crumbs (240 cal), ½ cup Parmesan cheese (216 cal), 1 large egg (74 cal) and seasonings (garlic powder, parsley, oregano & pepper). Use the amounts of sauces and cooked the meatballs the same as listed. I made about 19 meatballs (67 calories each meatball, sauce should be measured separately). This was not oily and the meatballs were awesome over whole-wheat pasta. I’m sure the beef cooking in the sauce would give this great flavor but if you need a lower calorie / fat version, this truly is worth a try.

Fresh Blueberry Pie I

I never made blueberry pie before and this was really easy. I did use a frozen deep dish pie crush, fresh blueberries with extra lemon juice & zest. Substituted cornstarch for tapioca (less expensive). I also used a ceramic blackbird to release steam and had a perfect pie, not runny at all. Flavor was awesome. Calorie count not bad for pie.

Luau Chicken

Good easy meal. I added pineapple chunks and pepper flakes to dish. I didn't pre-cook the chicken, I figured an hour in the oven would cook it fully (shortcut). I did double the sauce recipe.

Anaheim Fish Tacos

We really enjoyed this recipe. I used tilapia, jalapeno and onion (instead of leek & chili). I used canned diced tomatoes undrained (sub for broth, I ran out). I made a sour cream, chopped chipotle mixture to add on the taco once served. Even better topped with sliced avocado. I really love fried fish tacos but this is just as good but in a healthy way. Can't wait to make again.

Ramen Noodle Soup

Super fast, cheap & tasty recipe. Ramen noodles were on sale 6 packs for $1. I added frozen edamame and sriracha hot chili sauce (instead of chili oil) for texture and spice.

Southwestern Pasta Salad

First recipe I came across on the allrecipes spinner app. I follow the recipe as listed, did add more lime juice & cumin (love the combo). Excellent side dish with grilled chicken or portabella mushrooms. Makes a very good main dish for a vegan.

Healthy Banana Cookies

I really like the texture of these cookies. I didn't add oil, used applesauce instead. I added 2 tablespoons of reduced fat peanut butter for more flavor and 1 almond on top of each cookie for crunch. My Vegan Mom loved them.

Dill Potato Salad

I used fat free sour cream to reduce calories and fat. I liked this better than reg. potato salad with mayo. It's a good sub. if you have vegetarians or folks who can't have eggs. Use tofu sour cream to make it vegan.

Slow Cooker Spicy Black-Eyed Peas

Changes I made: 4 cups water, 1 can chicken broth Turkey bacon / lean ham, didn't add any salt, 1 small can no salt tomato sauce that was added 1 hour before it was done. Recipe was so easy, inexpensive and tasty. I ate it as a main dish with sliced avocado.

Raspberry Oatmeal Bars

Such a tasty treat. I follow the recipe step by step. I used low sugar raspberry jam with a splash of lime juice. I've been dieting so every calorie counts. A small piece takes care of the sweet tooth. Enjoy!

Black Bean Salad

Good stuff, used as a side with a veggie burger, trying to be healthy... I changed a few things. I added 2 cans of beans (small red kidney), only one can of corn, canned pineapple chunks (minus juice) & grape tomatoes (cut in half). Lime juice is key to this dish.

Baingan Bharta (Eggplant Curry)

Awesome. I'm dieting and thought I had to give up Indian food, this is pretty close to what we get at our fav Indian spot. I used fat free sour cream (that's what I had on hand). Enjoyed with brown rice.

Banana Sour Cream Bread

Wow! How great was this banana bread. My husband & I couldn't stop munching on it. I didn't use the egg, the batter was so creamy I didn't think it needed it. The cinnamon sugar was finger licking good.
