Broccoli and Ramen Noodle Salad

This took me longer to eat than make. Simply yummy. I made the following changes based on personal taste: Only used 1 seasoning packet (afraid it would be too salty). Reduced sugar to 1/4 cup. Substitute whole almonds for peanuts & olive oil for veggie oil. Might used rice vinegar & even less sugar next time.

Plantain Corn Muffins

Thanks for sharing such a creative recipe. I love plantains and corn muffins, genius idea. I made these without eggs and use 1/3 cup drained crushed pineapple & 2 cups mashed (almost black ripe) plantains. If you use soy milk and earth balance this would be a vegan muffin.

Tres Leches (Milk Cake)

First attempt at tres leches, made it for a b'day/ father's day BBQ. Everyone really enjoyed the flavor. I made it as directed but used half & half instead of milk & only one cup, still had plenty of liquid. I cheated & used redi whip to cover & garnished with cherries in a shape of a heart. Next time I will make with the whipping cream. Thanks for sharing recipe.

Mom's Coleslaw

Excellent standard recipe. I made a vegan version with low fat vegenaise (1cup). Like most reviews suggested I used less sugar & mustard. I would make again with mayo.

Creamy Pesto Shrimp

I would make this again. Easy, quick & tasty. I made this 90% as written except I used much less butter & more cheese (adore cheese). The shrimp are upstaged by the sauce, even seasoned. The sauce is the star & would be awesome with chicken ,grilled portabello mushrooms or just over pasta.

Strawberry Pie II

Wow this is too easy & tasty to be true. I made slight changes based on reviews. Halved 3/4 of the strawberries and chopped up remainder. Only used 3/4 cup of sugar & 1/2 water. I think this could work even if the strawberries aren't perfectly sweet. This will made many times this summer.

Bacon Cheddar Deviled Eggs

Egg-mazing! I never tasted or made deviled egg before but wanted to add something traditional to our Easter dinner. I couldn't have made a better selection. I used turkey bacon (some guests didn't eat pork). This has made us deviled egg fans! Most complained that I didn't make enough.

Double Tomato Bruschetta

This was such a hit at our Easter dinner. Made the recipe as stated minus cheese (needed a vegan app.). I placed sun-dried tomatoes, garlic and basil in a mini food processor to save a few steps. Really good and would make again & again. We had a few spoonfuls left which we added to egg whites for breakfast. This would be amazing over pasta.

Quinoa and Black Beans

I made this as directed and wouldn't change a thing. I did use canned corn, it's what I had on hand. I made this several times and used red quinoa. It's a great vegan dish.

Greek Pasta with Tomatoes and White Beans

I enjoy making this on a busy weeknight especially on meatless Mondays. I add more feta (tomato basil flavor) and use frozen steamed spinach as a short cut.

Chickpea Salad with Red Onion and Tomato

Love it, its my favorite way to eat chickpeas. Makes a great side dish of main meal with some diced grilled chicken. I add 1 tbsp of balsamic vinegar for more flavor.

Downeast Maine Pumpkin Bread

I really did enjoy baking this pumpkin bread. I made 2 batches. One as listed except I added 1/2 cup apple butter with the remaining 1/2 cup oil & only used 2 cups of the sugar (brown & white). Second batch was a vegan version (Mom's a vegan). I used 1 ripe mashed banana and 1/2 cup of apple butter in place of the 4 eggs. Pumpkin flavor was very present and texture was moist. I will make this again & again. Semi-sweet chocolate chips would be a great addition.

15-Minute Herbed Chicken

My husband's favorite sauce. I added caramelized dice onions and used cream of mushroom soup. I think any condensed soup would work. This would make a great "gravy" on mashed potatoes.

Zesty Slow Cooker Chicken Barbecue

I love how easy this is and how tasty the results are. I didn't get to read the reviews for any changes but I did the following: Used Liquid Smoke (1 teaspoon) instead of Worcestershire. I didn't have salad dressing so I added apple cider vinegar with a bit of olive oil to equal the 1/2 cup of dressing. I also used fresh chicken and shredded after cooking for 4 hours on low and continued to cook for 1 more hour.

Cream Cheese Squares

This is dangerously easy and too good not to make often. I only used I package of low fat cream cheese, cut down on the sugar and brushed on melted butter (¼ cup), still delicious with the changes. I used a no frills brand of crescent rolls and had to pitch ends together to make sure the dough stayed in one piece.
