Cake Mix Cookies VIII

Reviewed: Apr. 11, 2014
FINALLY, a chocolate cake-mix cookie recipe that works!!! For many years I've been making the recipes that call for 1/2 cup oil, instead of butter, and they always end up flat and crispy. These turned out soft and fluffy. The only thing I changed was that I used 1/2 cup semi-sweet and 1/2 cup white chocolate chips. I'll definitely be making these again soon!

Easy Baking Powder Drop Biscuits

Reviewed: Dec. 27, 2013
These turned out great! They were super easy to make and delicious! Super moist on the inside and a perfect consistency. I did, however, cut the time down to 10 minutes. I think they would have been too hard had I left them in longer. Mmmm... perfect with our country bacon gravy and egg breakfast!!!

Easy Pumpkin Muffins

Reviewed: Nov. 17, 2013
These were delicious, soft, and so easy to make! We thought about using pumpkin pie spice instead of the three spices mentioned, but stuck with the original recipe and it turned out great! The next time we added some chocolate chips which really made them outstanding! Mmmm!!!

Baked Lemon Chicken

Reviewed: Sep. 24, 2013
This was delicious!!! But, it looked like it needed a little more flavor, so I added a few things to this recipe: -added a little extra lemon juice -used Panko and Ritz crackers as my bread crumbs -added salt, pepper, garlic powder, a little Parmesan (and next time I'll add a little cayenne) to the bread crumbs. It turned out crispy on the outside and moist on the inside with a slightly tangy and satisfying flavor! Perfect in my mind! But my husband thought it needed a little BBQ sauce...? what?

Chocolate Zucchini Cake III

Reviewed: Oct. 16, 2012
This was delicious! Very moist and chocolaty. Quite addicting! I did, however, replace 1/2 cup of the oil with applesauce and added some chocolate chips in place of the nuts. (I love an extra kick of chocolate.) Next time I'll add a little vanilla to enhance the flavor. But, don't worry about any frosting (it doesn't need it)! Mmmm... I'll definitely make this one again.

Grilled Lemon Chicken

Reviewed: Feb. 29, 2012
I did not have a bell pepper or Dijon mustard on hand . So, I used a mixture of yellow and dry mustard instead, along with a little cayenne pepper. Marinaded for a few hours and it turned out SO delicious and MOIST! Everyone loved it! I was a little nervous to use olive oil since it has such a strong smell/taste, but I couldn't taste it in the chicken. This was perfect!

Chocolate Mint Candies Cookies

Reviewed: May 24, 2011
These are incredible! I've had so many people ask me for this recipe. TIPS: Follow the directions exactly! Use semi-sweet HERSHEY'S chocolate chips. For some reason, it isn't as good when I use anything else. I would suggest the dough gets refrigerated for at least 1 1/2 to 2 hours since the warmer the dough is, the flatter they'll turn out. And take them out RIGHT when they're done! (I even take a minute or so off my time.) They might not look done, but they are! Thanks for this delicious recipe!!!

Tangy Mango Slaw

Reviewed: Mar. 5, 2011
Mmmm!!! Even my 3 yr old ate this! And I couldn't get enough! This is DELICIOUS the way it is, but I made a few changes to cater to my family's tastes: -only used 2 Tbls of red onion finely chopped -used regular white sugar -added 1 Tbls mayo to thicken the sauce -replaced walnuts w/ almonds -added pineapple tidbits & shredded coconut

The Best Lemon Bars

Reviewed: Feb. 20, 2011
These turned out PERFECT! I was totally amazed since my husband made them (and he rarely ever cooks). We couldn't stop eating them and even impressed our dinner guests. Tips: Use a GLASS pan (not metal) to avoid a common metal-ish aftertaste. And sprinkle w/ powdered sugar soon after removing from the oven so it sticks (no one likes to breath it in).
