Chocolate Zucchini Cake III

This was delicious! Very moist and chocolaty. Quite addicting! I did, however, replace 1/2 cup of the oil with applesauce and added some chocolate chips in place of the nuts. (I love an extra kick of chocolate.) Next time I'll add a little vanilla to enhance the flavor and maybe even chocolate icing (although it's great without it). Mmmm... I'll definitely make this one again.

Grilled Lemon Chicken

I did not have a bell pepper or Dijon mustard on hand . So, I used a mixture of yellow and dry mustard instead, along with a little cayenne pepper. Marinaded for a few hours and it turned out SO delicious and MOIST! Everyone loved it! I was a little nervous to use olive oil since it has such a strong smell/taste, but I couldn't taste it in the chicken. This was perfect!

Chocolate Mint Candies Cookies

These are incredible! I've had so many people ask me for this recipe. TIPS: Follow the directions exactly! Use semi-sweet HERSHEY'S chocolate chips. For some reason, it isn't as good when I use anything else. I would suggest the dough gets refrigerated for at least 1 1/2 to 2 hours since the warmer the dough is, the flatter they'll turn out. And take them out RIGHT when they're done! (I even take a minute or so off my time.) They might not look done, but they are! Thanks for this delicious recipe!!!

Tangy Mango Slaw

Mmmm!!! Even my 3 yr old ate this! And I couldn't get enough! This is DELICIOUS the way it is, but I made a few changes to cater to my family's tastes: -only used 2 Tbls of red onion finely chopped -used regular white sugar -added 1 Tbls mayo to thicken the sauce -replaced walnuts w/ almonds -added pineapple tidbits & shredded coconut

The Best Lemon Bars

These turned out PERFECT! I was totally amazed since my husband made them (and he rarely ever cooks). We couldn't stop eating them and even impressed our dinner guests. Tips: Use a GLASS pan (not metal) to avoid a common metal-ish aftertaste. And sprinkle w/ powdered sugar soon after removing from the oven so it sticks (no one likes to breath it in).
