Whole Wheat Snickerdoodles I

I made these yesterday and they are gone. I used the smart balance butter blend and splenda baking and splenda brown. The recipe does not make many so if you have kids I would double it. My kids, 10 and 1, loved them. These cookies turned out like a bakery cookie. Chewy, soft, a little crispy on the edges. I think these are the best cookies I have ever baked.

Fish Tacos

These are VERY good.I made them about a month ago. I am slow on the reviews sometimes. I did not fry the fish. I coated it with cormeal and cooked it on a big electric griddle. I also used talapia. The sauce is awesome!!! I used all fat free yogurt, no mayo and whole wheat tortillas. I am making these again tomorrow.

PHILLY Baked Crab Rangoon

I have made these countless times. I have found that if you double the filling and spray the wontons with cooking spray BEFORE you fill and bake them, they are SOOOO GOOD! I also bake them at 375 degrees for a little less time. I have used yogurt in place of the mayo.

Secret Burger Sauce

Mediterranean Puff Pastry Chicken

VERY VERY VERY tasty. I do not think I would make again though. WAY too greasy and WAY too much fat and calories. I have a recipe for a whole wheat pie dough that I think I will use next time.

Creamy Layered Fruit Sensation

I have made this a few times. I did get it from another site. It is very very good and easy to make a sugar free version. I made this for my 1 year olds first birthday. I used a sugar free angel food cake and sugar free pudding. The difference in sugar content for sugar free and regular whipped topping is not that much. I just used the low fat variety. I also upped the almond extract because you really can not taste it. We like that flavor so I doubled that amount.

Hard Taco Shells

There is a way to make them crispy without added all the fat from frying. Spray them with coooking spray and drape them over the rack in your oven. Bake until crispy.

SC Frogmore Stew

I gave this recipe three starts for a few reasons. One is the ease of cleanup.I dumped it out on newspaper on the table. It is very easy to roll up the newspaper and there are no plates to clean. the kids love it. It is a lot of fun and a new way to have dinner. It was a one pot meal and added to the ease of cleanup. It feeds a lot of people although I just did half a recipe and still had leftovers. There is not much flavor to the dish. I did add the old bay, 2 onions, and 2 lemons. It smelled very good while cooking but it lacked in flavor. i am not sure what else to add to make it more flavorful.

French Silk Chocolate Pie

Peanut Butter Fingers II

Alaskan Salmon Chowder

VERY GOOD! I had left over salmon that was flovored with butter, lemon, and dill. This was a great way to use up my leftover salmon. My husband loved it and he is from alaska and has just about anything salmon. THANKS!

Whole Wheat Pumpkin-Applesauce Muffins

These are sooooo good. My 1 year old and 10 year old both loved them. I love that this recipe is 100% whole wheat and still very moist. Often times whole wheat baked goods can be dry but these are very moist. I substituted splenda for the sugar.

Pumpkin Cheesecake Bars

I made this recipe this evening for dessert. I read some reviews stating that there was too much crust compared to filling. I doubled the recipe and put it in a 9x13 pan and it was SOOOOOO PERFECT!!! The right amount of filling to crust. I did substitute smart balance for butter and splenda for the sugar.I had to bake it a few extra minutes though. GREAT recipe! Thanks!

Roasted Brussels Sprouts

I make these all the time. I roast them at a much higher temperature though about 450. I drizzle olive oil on them and sprinkle them with garlic powder (fresh garlic burns at such a high temp)onion powder, salt, and pepper. These are awesome. The time does vary quite a lot though. It depends on if you use fresh ones or frozen and the size. Right now fresh ones are too expensive so I use frozen ones.
