Morning Glory Muffins I

These muffins are perfect when you want to indulge or as a quick post workout snack. I halved the recipe which turned out making twelve perfectly sized muffins. They are a little sweet, next time may use less sugar. I also added 1/2 of a very ripe banana which probably contributed to the sweetness. Delicious with coffee! Thank you for posting this recipe, will definitely make again!

Mayonnaise Biscuits

I had tried a few of the top rated biscuit recipes on this site and was not satisfied with the results. This recipe is the BEST! While some say the end result comes out more like a roll, mine had the taste and texture of a light and fluffy biscuit. Not to mention they are super easy to make. Thanks for posting!

Peanut Butter Vegetable Chicken Soup

AMAZING!! I made a few changes to make this for 2 people: I thawed 1 chicken breast, and simmered it with onions, carrots, and spices. Then drained, put back in the pot and added the veggies, simmered, and added about a 1/2 tbsp peanut butter. I used fresh green beans that I french cut and chopped zucchini(trying to use up what was left in the fridge!) and omitted the tomatoes because I didn't have any. You'd never know there was peanut butter in this soup and the flavor is amazing. My soup tasted like delicious, southern, comfort food-without the guilt!! =)

Asparagus Stir-Fry

Wonderful! Like others I omitted the extra salt & sugar. The soy sauce has a wonderful flavor on it's own. I also didn't use dry mustard because I didn't have any. I added red pepper flakes and finely chopped ginger, and threw in some sliced red and yellow peppers. Served it over brown rice. This side dish also makes a delicious vegetarian meal!!
