Jamie's Cranberry Spinach Salad

LOVE LOVE LOVE this recipe! I make the dressing and keep it in the fridge, then I just serve it over the spinach and a sprinkling of cranberries (we skip the nut - we have a nut-allergic member of the family) I eat this about 3-4 nights a week with dinner.

Beef Barley Vegetable Soup

I modified this just a bit - I put all of the ingredients in the crock pot to start, then, when the cooking time was almost complete, I removed the beef roast and pulled it apart, discarding the fat. It was DELICIOUS! Both my 4-year old picky eater and my 21-month old gobbled it up.

Cheesy Potato and Corn Chowder

This was good - my family doesn't really care for potatoes, so I used 1/2 c rice in place of the potatoes and added a chopped carrot for extra nutrition/bulk and it was very good...in my opinon, the green chiles make it.

Roasted Lemon Chicken

This was fantastic! My whole family loved it. I used the meat and bones to make homemade chicken soup with homemade stock, and the rosemary/lemon flavor was even evident in the soup. Mmmm!

Easy Pumpkin Muffins

It's funny that the reviews that say something is wrong with the recipe changed it before trying it the way it was written. It does work without adding oil or eggs or anything else. I love that there is a lot of pumpkin it it - I did the calculations based on the nutrition info on the can of pumpkin, and each muffin has over 75% of the RDA of vitamin A! How's that for sneaking something healthy into your diet? My son is allergic to eggs, so this is a fabulous recipe to have in my file.

Buttermilk Cinnamon Rolls

Oh. My. Gosh. These are AMAZING! I put homemade cream cheese frosting on them about 30 minutes after they came out of the oven, and my husband, a big fan of Cinnabon, said that they're even better than Cinnabon! I used 1 c bread flour along with 3-1/2 c AP flour, and I used the overnight method...I cannot go on enough about how absolutely fantastic these were...and I chuckle about the review that said it was awful...well, if you put in 8 c of flour, then of course it will be awful - the recipe calls for 4-1/2!

No-Fuss Cinnamon Cheesecake

The reason I made this was that my son is allergic to eggs and nuts, and I needed a make-ahead dessert because I was having guests coming right when I got home from working a full day...I loved how easy this recipe was, and how inexpensive the ingredients were. I got rave reviews - people were talking about it and asking for the recipe for days afterward. I did make 2 small changes - the amount of butter on the top seemed to be way too much, so I decreased it by half - and did the same to the cinnamon/sugar top - decreased it by about 1/4. I also think that a great adaptation would be to use 1/2 of the cream cheese filling and 1/2 of the butter/sugar topping and it would be a great brunch item - it tastes very similar to a cheese danish.

Healthier Banana Crumb Muffins

I had 4 black bananas to get rid of, so I made these. I added a bit of cinnamon to the batter and substituted applesauce for the eggs because my son is allergic to eggs...they came out looking beautiful and tasting even better! I love that there is butter in the recipe rather than oil - it gives them a very rich flavor.

Coconut Cranberry Bars

YUM!!! My husband said that these are his new all-time-favorite cookies. They are super easy, and really good. I left out the nuts because my son is allergic to nuts, but I think that the nuts would make them even more irresistible!

Vegan Brownies

My son is allgergic to eggs, and brownies seem to be very difficult to make egg free. This recipe is definitely a hit! The brownies are very fudgy, very chocolately, and my son asked me to use this recipe for brownies all the time from now on.

Spicy Slow Cooker Black Bean Soup

This is the best, cheapest, easiest soup ever! I serve it with a dollop of sour cream and homemade pice de gallo on top. I also blend it, as is an option in the recipe, using a hand blender.

Lentil Soup

Great, but I do make some changes. I use chicken stock in place of water, and I leave out the vinegar. My 3-year-old picky eater loves this soup, and it's one of my hubby's favorites, plus it's really heathy and cheap.

Cream Cheese Blueberry Pie

I used about 1 Tbsp of lemon juice and otherwise followed the recipe. It was fantastic! My whole family loved it, and my brother and hubby fought over the last piece...which would have been my brother's 3rd piece that day, and my hubby's second!

Zucchini Risotto

really good - it gets my hubby to eat zucchini, which he doesn't care for, plus my picky toddler likes it, and it's a one-pot meal. I do add quite a bit extra zucchini (3 or 4 times that listed int he recipe), and I dice it rather than shredding it. I also add a few extra SD tomatoes.

Unbelievable Rolls

Really good - slightly sweet, soft. I made them smaller than the recipe calls for - made a batch of about 50, and used them for mini cheeseburgers at an appetizer party. I made them ahead of time - they freeze well.
