Zucchini Brownies

My son is allergic to eggs, so this is a wonderful egg-free recipe that had the extra added bonus of veggies...what a way to get in some extra veggies! YUM!

Glazed Meatloaf II

My hubby loves his mom's meatloaf and hates when I even attempt meatloaf because it's never as good at his mom's...but this time, my little boy asked for meatloaf for dinner, so I found this recipe and made it, and both my little boy and the "big boy" loved it! I did make a change though - I sauteed the onions prior to mixing them into the loaf, and I also added 1 carrot (I made a 1/2 recipe though, so 2 carrots for the full recipe), shredded and sauteed (with the onions). The only reason I added the carrot was to sneak in some extra nutrition/fiber and to stretch the pound of ground beef a little further. It was a big hit!

Baked Chicken Nuggets

YUM - I left the recipe out for my hubby to make while I was out, and from what he said, it was easy to make. My 3-year-old liked them as well. One change we made: We used crushed oyster crackers in place of breadcrumbs because we were out of breadcrumbs - they turned out great.

Andrea's Pasta Fagioli

ok...way too much pasta, in my opinion - it was more like a pasta dish with broth and a few beans. To me, pasta fagioli should have more beans and more broth, and not so much pasta. The flavor was good, but next time I'll cut the pasta in 1/2. Also, it makes a TON of soup.

Lentil Soup

Great, but I do make some changes. I use chicken stock in place of water, and I leave out the vinegar. My 3-year-old picky eater loves this soup, and it's one of my hubby's favorites, plus it's really heathy and cheap.

My Best Clam Chowder

The name says it all - "My BEST Clam Chowder". It's fabulous! I use milk instead of cream (to cut the fat) and thin it a little with a bottle of clam juice.

Unbelievable Rolls

Really good - slightly sweet, soft. I made them smaller than the recipe calls for - made a batch of about 50, and used them for mini cheeseburgers at an appetizer party. I made them ahead of time - they freeze well.

Pineapple Zucchini Muffins

I've made these for playgroups, and for our neighbor when she had a baby, and they all asked for the recipe. A great way to sneak in some extra veggies for those non-veggie-lovers in your life! They turn out well with the zucchini and if you substitute carrots.

Great! My peppermint-loving 3-year-old son couldn't get enough of these during the holidays. The freeze well...actually it's the beginning of March, and I just gave my son the last one from the freezer today!

Zucchini Risotto

really good - it gets my hubby to eat zucchini, which he doesn't care for, plus my picky toddler likes it, and it's a one-pot meal. I do add quite a bit extra zucchini (3 or 4 times that listed int he recipe), and I dice it rather than shredding it. I also add a few extra SD tomatoes.

Spicy Slow Cooker Black Bean Soup

This is the best, cheapest, easiest soup ever! I serve it with a dollop of sour cream and homemade pice de gallo on top. I also blend it, as is an option in the recipe, using a hand blender.

Green Bean Bundles II

Delicious, but I think I'll pre-cook my bacon a little next time - my bacon was not as done as I would have liked, and the beans were starting to burn. I liked this appetizer because it ctually contained veggies, whereas so many appetizers are just cheese, meat and fat.
