Best Ever Split Pea

I'm not a big fan of split pea soup, but my hubby requested a split pea soup with no ham, so I made this one and it was excellent...not too thick.

Sweet-Potato Muffins

The batter is really dry and I thought I messed it up, but these muffins baked up beautifully. They were very hearty and delicious, and I love the nutritional value of so much sweet potato in the recipe.

Roasted Lemon Chicken

This was fantastic! My whole family loved it. I used the meat and bones to make homemade chicken soup with homemade stock, and the rosemary/lemon flavor was even evident in the soup. Mmmm!

Beef Barley Vegetable Soup

I modified this just a bit - I put all of the ingredients in the crock pot to start, then, when the cooking time was almost complete, I removed the beef roast and pulled it apart, discarding the fat. It was DELICIOUS! Both my 4-year old picky eater and my 21-month old gobbled it up.

Cheesy Potato and Corn Chowder

This was good - my family doesn't really care for potatoes, so I used 1/2 c rice in place of the potatoes and added a chopped carrot for extra nutrition/bulk and it was very good...in my opinon, the green chiles make it.

Best Tuna Casserole

I'm preggo and had a MAJOR craving for tuna noodle casserole yesterday, so I found this recipe and made it asap---I needed a recipe that didn't call for cream of mushroom soup because there was no time to run out to get some - I needed the casserole ASAP! It was really good - but I used 1/2 the butter that it called for and left off the topping and cheese to cut out some of the fat and calories. The only other modification that I thought it needed was double the tune...but that could be my pregnant craving for tuna talking!

Land of Nod Cinnamon Buns

This recipes was delicious, but I think one small change would improve it a great deal. If you sprinkle 1/3 of the sugar mixture in before the dough goes in, then only add 1/2 the dough, then 1/3 more of the mixture, then the remaining dough and remaining sugar, that would eliminate a problem that I ran into - a lot of the sugar and raisins ended up clumped together at the bottom after you turn it out onto a serving plate rather than evenly spread throughout the dish. It was still delicious though, and so easy!

Hot Artichoke Spinach Dip

I asked my brother to bring this for our annual Christmas Eve appetizer party, and it was awesome - my favorite appetizer of the night...and he said it was super easy to make, and he's not a very experienced cook.

Candied Kielbasa

This was good - a lot like other similar recipes I've tried...I like the horseradish in it - it gave it an interesteing kick. We used Lite Kielbasa, and it took away a lot of the grease. All in all - pretty good.

I like the flavor in general, but it was far too sweet. I think cutting the amount of sugar way down would have helped, or maybe using club soda in place of ginger ale...it was like liquid candy.

These are fantastic! Not only delicious, but also very pretty! My hubby suggested drizzling them with melted white chcolate instead of the glaze, which sounds yommy - maybe next time, I'll try that.

a great recipe, but slightly bland. I think some added sauteed onions might make it tastier, but all in all, still a good recipe. The flavor of the potatoes really shines.

Toffee Caramel Squares

These are really yummy and pretty easy to make. You have to be careful to make the bottom layer really even and make sure it's on an even surface when pouring the caramel topping on...Mine ended up with thick caramel in some places, and hardly any caramel in others...but that's easily avoidable if you're move careful than I was. Also, my son is allergic to eggs, so this is a great egg-free cookie!

Lighter Fettuccini Alfredo

Oh my gosh, this is yummy! I LOVE fettuccini alfredo, but I can count on one hand the number of times I've eaten it due to it being SO bad for you. This is a great lighter version, and I doesn't taste light! I did find the sauce to be a tad thick, but an exptra splash of milk would easily solve that problem. We added some veggies to the sauce for added nutrition and bulk, and it was fabulous - my 19-month old gobbled it up too, veggies and all!

Cream Cheese Blueberry Pie

I used about 1 Tbsp of lemon juice and otherwise followed the recipe. It was fantastic! My whole family loved it, and my brother and hubby fought over the last piece...which would have been my brother's 3rd piece that day, and my hubby's second!

Maple Dill Carrots

My hubby, who told me he hates glazed carrots LOVED these. My 3-year old ate some, and he's not big on carrots, and my 13-month old shoveled them in so fast I thought he was going to choke! YUM YUM YUM...The best part is that they're made with ingredients I always have on hand. I'm definitely making these again!
