My favorite things to cook
I love to cook and bake everything - from homemade bread (no bread machine here) to chicken curry to escargot and everything in between.

My favotite is when someone I cook for says "this is the best _____ I've ever had"
My cooking tragedies
My littlest boy is allergic to many foods which makes cooking/baking a challenge at times. We're hoping he outgrows some or all of them.

Easy Pumpkin Muffins
It's funny that the reviews that say something is wrong with the recipe changed it before trying it the way it was written. It does work without adding oil or eggs or anything else. I love that there is a lot of pumpkin it it - I did the calculations based on the nutrition info on the can of pumpkin, and each muffin has over 75% of the RDA of vitamin A! How's that for sneaking something healthy into your diet? My son is allergic to eggs, so this is a fabulous recipe to have in my file.

Pressure Cooker Carnitas
Amazing! I'made these exactly as the recipe states and they were delicious...I saved the leftover broth and added it to a soup as well.

Buttermilk Cinnamon Rolls
Oh. My. Gosh. These are AMAZING! I put homemade cream cheese frosting on them about 30 minutes after they came out of the oven, and my husband, a big fan of Cinnabon, said that they're even better than Cinnabon! I used 1 c bread flour along with 3-1/2 c AP flour, and I used the overnight method...I cannot go on enough about how absolutely fantastic these were...and I chuckle about the review that said it was awful...well, if you put in 8 c of flour, then of course it will be awful - the recipe calls for 4-1/2!
