Fresh Fruit Salad with Baby Spinach and Yogurt-Poppy Seed Dressing

Even my husband who hates spinach and healthy foods in general loved this. Including the dressing - and he's normally a ranch guy. I have to say my raspberries were a bit sour, and the dressing is sorta sour too, but paired with the sweet juicy pineapple and very sweet banana, it was perfect! I even added some pecans for protein (I'm a protein nut!)

Blender Salad Dressing

Tastes like a hot dog - I guess that's the ketchup, onion & mustard flavors though. Do not make this. It makes a TON.

Zesty Slow Cooker Chicken Barbecue

I thought this chicken was wonderful. Not only was it simple (how many recipes can you throw frozen chicken in a pot?!) but it was so delicious. We served it over brown rice last night, and tonight we'll have it as sandwiches with french fries and salad. And for 300 calories, you can't beat that! Mine made enough for 10 people too, so I'm sure it's less than that. I'm allergic to an ingredient in almost all salad dressings so I made my own Italian with half oil, half vinegar and some Italian seasoning & garlic powder. This was great and I can't wait for the leftovers tonight!

Excellent - even hubby who hates veggies loved this one! The sweet potatoes were so flavorful. I've shared this with everyone I know!!

Slow Cooker Potato Soup

Good starter recipe but needed to be seasoned! I did grated medium cheddar once. I sprinkled garlic salt another time. I think bacon would also be good to add in at some point too...
