Potato Latkes I

A tried and true recipe. I personally like to use mashed potatoes instead of flour, add a little lemon juice to the shredded potatoes to keep them from turning brown( orange juice works too.) Place shredded potatoes in a towel lined bowl place a towel on top and place a plate with a heavy pan on top. Let sit about 10 min. Mix mashed and shredded potatoes together add shredded onions, 1 egg, salt and pepper. Fry as directed. Much better potato taste.

Best Ever Sausage with Peppers, Onions, and Beer!

Tried this tonight. Hubby hated the beer taste, not liking the after taste , either. Three other adults loved it. I think next time I might try adding beef broth and not the tomato paste and beer, too much like spaghetti to me. If you like the peppers & onions do add as much as the recipe calls for, they cook down & get lost in the tomato sauce. Other wise a good base recipe to make your own. We put ours on hoagie buns .

Juicy Roasted Chicken

I've put celery and whole onions inside my chicken and turkeys for years. Hubby doesn't like the stuffing inside the bird, and then the experts started saying it was bad for you because it never cooked all the way through. Try an orange cut in quarters, even better.

Chicken Scampi II

Great dish ! I added it to linguine . Instead of lemon, I don't have any, I used orange juice . I did use the suggestion of breading the chicken first , but next time I think I'll cut the chicken smaller and not use the flour on the chicken. The flour just soaked up all the sauce and left nothing for the linguine. Otherwise great dish for a busy week night . My husband cleaned his plate in no time . You will need to double this if your feeding more than 2 , even with the linguine ,not much left over.

Kielbasa and Cabbage II

I make this often ! But I add potatoes, carrots, sometimes turnips, broccoli is good, as well as cauliflower. Use half as much cabbage. AND I serve a large pan of cornbread with it. just another WV girl

Chicken Enchiladas I

Good basic recipe. BUT if your looking for fast and easy,try buying frozen Burritos or Tiquitos, they are mild in flavor, but it cuts down on the cooking time. Also use red enchilada sauce (small can)and large can of tomato sauce. Mix together and pour 1/3 into bottom of pan,prevents burning. Add burritos and cook uncovered 10 min. add the rest of sauce and 2 cups favorite cheese,Tex-Mex , Cheddar or Colby mix. Be sure the sauce covers everything and cook 10-15 min. more, or cheese is melted. If you like the beans add before sauce or heat and serve as a side.

Filet Mignon with Rich Balsamic Glaze

I made this last night. The steak was moist and tender, very good. The sauce was not our taste, took over every other flavor. The vinegar was too strong. Next time I'll just make a beef broth glaze.
